Book excerpt: Excerpt from Junior Home Economics Food This text is designed as a beginning text in foods to be used with pupils soon after they enter the period of secondary education. That is, these units are to be among the early educational experiences that have as their chief purpose the adjustment of pupils to some of the materials, ideas, and situations that constitute living. It is organized in units as described by Dr. H. C. Morrison in The Practice of Teaching in the Secondary Schools. The organization, point of view, and numerous devices resulted largely from teaching in the Labortory Schools of the University of Chicago. However, a wide variety of experiences afforded contributions. The sequence of the units as given is considered advisable under some conditions; under others it may be disregarded. Experience has shown that a positive attitude toward particular foods is economically furthered when pupils prepare these foods themselves. If pupils have had no experience with food preparation, it is well to have the nutrition unit follow the one on preparation. Otherwise too much attention would be diverted to preparation to the detriment of the nutrition learnings. In addition, knowledge of the ingredients of various dishes as gained in the preparation unit is of positive assistance in nutritional evaluations. As will be noted, family marketing is based on nutritional requirements. Consequently, it is essential that pupils taking up the unit on marketing have nutritional understandings. Classification of Foods I - Carbohydrates: Produce fuel and energy. (a) Starch is found in large amounts in cereals and flour, rice, macaroni, etc. In vegetables such as corn, potatoes, dry peas and dry beans, etc. (b) Cellulose is the fibrous material holding the food elements of grain products, vegetables, and fruitin shape. (c) Sugar is found in cane sugar, maple sugar, honey, milk, fruits, especially dates, raisins and prunes and some of the vegetables. II - Fats: Produce fuel and energy. Fat is found in cream, butter, vegetable oil, nuts, fat of meat, etc. III - Proteins: Build and repair tissue. Proteins are found in milk, cheese, eggs, meat, fish, dried peas and dried beans, nuts, etc. IV - Mineral Matter: Builds tissue, bone and teeth, helps to control and regulate body processes, and keepsthe blood in good condition. It is found in vegetables, fruits, milk, eggs and whole grains. V - Waterfunctions in all of the body processes. It is present not only in food, but in every part of the body. It quenches thirst, helps circulation, aids digestion, regulates body temperature, stimulates the nervous system, and carries off waste. VI - Vitamines: Promote growth. The fork, or more than one if needed, should be placed at the left side with tines up. The glass is placed, with the top up, at the tip of the knife. The bread and butter plate is placed at the tip of the fork. If a butter spreader is used it is laid on the bread and butter plate. A folded napkin is placed at the left of the fork so that the open corner will be nearest the person served, and if a place card is used it is generally laid on the napkin. Individual salts and peppers may be placed at each cover, or larger ones may be placed so that they are convenient for each person. The silver is placed 1 inch from the edge of the table, and in the order in which it will be used, beginning farthest away from the plate. If more than 5 or 6 pieces are re quired for each person the extra silver is placed when needed. Just before the meal is announced the butter should be served, and the glasses filled within an inch of the top.
