Download or read book The New Hydropathic Cook Book written by Russell Thacher Trall and published by Andrews McMeel Publishing. This book was released on 2013-10-15 with total page 238 pages. Available in PDF, EPUB and Kindle. Book excerpt: With mid-nineteenth century advances in scientific studies of health and nutrition, diet-based cookbooks like Dr. Russell Trall’s proliferated. Trall founded the New York Hydropathic and Physiological School in 1854, and his New Hydropathic Cook Book was one of the first to subscribe to the school’s advocacy of the water cure, using baths and drinking pure water to combat disease and maintain health. The diet proposed in the cookbook consists almost entirely of fruits, grains, and vegetables, with a few animal-based recipes thrown in for those who demanded a wider diet. More than just a list of recipes, the cookbook presents the basis of Trall’s diet—the belief that all nutritive material comes from vegetables, and thus animal foods are inferior because they are derivative and likely to be impure. It also includes a discussion of digestion and an exhaustive catalogue of vegetable foods. This edition of The New Hydropathic Cookbook was reproduced by permission from the volume in the collection of the American Antiquarian Society, Worcester, Massachusetts. Founded in 1812 by Isaiah Thomas, a Revolutionary War patriot and successful printer and publisher, the society is a research library documenting the lives of Americans from the colonial era through 1876. The society collects, preserves, and makes available as complete a record as possible of the printed materials from the early American experience. The cookbook collection comprises approximately 1,100 volumes.

Book excerpt: This three-volume encyclopedia on the history of American food and beverages serves as an ideal companion resource for social studies and American history courses, covering topics ranging from early American Indian foods to mandatory nutrition information at fast food restaurants. The expression "you are what you eat" certainly applies to Americans, not just in terms of our physical health, but also in the myriad ways that our taste preferences, eating habits, and food culture are intrinsically tied to our society and history. This standout reference work comprises two volumes containing more than 600 alphabetically arranged historical entries on American foods and beverages, as well as dozens of historical recipes for traditional American foods; and a third volume of more than 120 primary source documents. Never before has there been a reference work that coalesces this diverse range of information into a single set. The entries in this set provide information that will transform any American history research project into an engaging learning experience. Examples include explanations of how tuna fish became a staple food product for Americans, how the canning industry emerged from the Civil War, the difference between Americans and people of other countries in terms of what percentage of their income is spent on food and beverages, and how taxation on beverages like tea, rum, and whisky set off important political rebellions in U.S. history.

Download or read book The Hygienic Cook Book written by John Harvey Kellogg and published by Andrews McMeel Publishing. This book was released on 2013-07-16 with total page 102 pages. Available in PDF, EPUB and Kindle. Book excerpt: Published in 1876 in Michigan, The Hygienic Cook Book was part of the 19th century health reform movement that stressed a vegetarian diet to achieve wellness. Author John Harvey Kellogg, an American physician, took the health reformer’s diet even further by emphasizing abstinence from caffeine, alcohol, spices, condiments, dairy, eggs, and vinegar. Kellogg believed that “[c]ondiments are innutritious and irritating….they irritate the digestive organs, impairing their tone and deranging their function.” Above all, he stressed the importance of bowel health for an overall healthy body. Along with tips for reforming the diet as well as reasons for abstaining from animal products, spices, and condiments, The Hygienic Cook Book also contains wholesome recipes such as Johnny Cakes, Potato Bread, Apple Brown Bread, Graham Crackers, and Peach Toast. While Kellogg’s hygienic diet might not be for all tastes, The Hygienic Cook Book offers a fascinating look into the 19th century’s new focus on a healthier diet. Download or read book The Appledore Cook Book written by Maria Parloa and published by Andrews McMeel Publishing. This book was released on 2013-07-16 with total page 139 pages. Available in PDF, EPUB and Kindle. Book excerpt: Published in 1872 in Boston, The Appledore Cook Book was authored by renowned cooking teacher and writer Maria Parloa to be a go-to cookbook for new brides and housekeepers, and it was specifically geared toward simpler recipes with less expensive ingredients. This first of many cookbooks by Parloa was inspired by her time spent cooking at the Appledore House hotel on the Isles of Shoals, Maine. The Appledore Cook Book contains the first known recipe for tomato chowder (known today as tomato soup) as well as delectable family-sized recipes such as Lamb Chops, Dumplings for Soup, Baked Potatoes, Fried Ham, Buckwheat Cakes, Apple Cake, Ginger Snaps, and Pumpkin Pie. Emphasizing the purpose of this popular cookbook, Parloa states in the preface, “The great trouble with all the cook books which I have known . . . is, that they are too expensive, and that they use weight instead of measure, and also that they take for granted that the young housekeeper knows many things which she really does not.” With The Appledore Cook Book, Parloa provides just such a cookbook of simple-yet-tasty, inexpensive meals—a theme as popular in the 19th century as it is today. This edition of The Appledore Cook Book was reproduced by permission from the volume in the collection of the American Antiquarian Society, Worcester, Massachusetts. Founded in 1812 by Isaiah Thomas, a Revolutionary War patriot and successful printer and publisher, the society is a research library documenting the lives of Americans from the colonial era through 1876. Download or read book The Cook s Oracle and Housekeeper s Manual written by William Kitchiner and published by Andrews McMeel Publishing. This book was released on 2013-10-15 with total page 440 pages. Available in PDF, EPUB and Kindle. Book excerpt: This volume in the American Antiquarian Cookbook Collection, published in New York in 1830, is a new version of a famous recipe collection previously published in London by William Kitchiner, adapted specifically for use by the American public. Dr. William Kitchiner’s The Cook’s Oracle was an enormous best-seller upon publication in London in 1824, and the author developed an international reputation based on his eccentricities and the extravagance of his writing. Unlike most food writers of the day, he cooked the food himself, washed up afterward, and performed all the household tasks he wrote about. He traveled around with a “portable cabinet of taste,” a folding box containing all of his unique mustards and sauces, and he was well known for his invention of the popular Wow-Wow sauce. No wonder that an anonymous American “medical gentleman” (as asserted on the title page of this edition) chose to adapt Kitchiner’s English cookbook for American kitchens. In addition to over 600 recipes that run the full gamut of nineteenth century cookery, the book includes information about etiquette, dinner invitations, weights and measures (one of the first attempts to standardize cookbook measurements), carving, marketing advice, and techniques of boiling, baking, roasting, frying, and broiling. This edition of The Cook’s Oracle was reproduced by permission from the volume in the collection of the American Antiquarian Society, Worcester, Massachusetts. This book was released on 2012-10-16 with total page 100 pages. Available in PDF, EPUB and Kindle. Book excerpt: The particular emphasis on varieties of seafood in The New England Cook Book, including specific recipes for cod, halibut, striped and sea bass, black fish, shad, salt cod, fish cakes, lobsters and crabs, “scollops,” eels, clams, and oysters easily identifies the book’s origins. It also contains almost 300 recipes for a broad range of dishes and ingredients from soup to nuts, as well as an entire section of seventy-five “miscellaneous receipts and observations useful to young housekeepers” that includes all manner of advice for making soap, cleaning carpets, extracting stains from cotton goods, driving away various kinds of household vermin, and more. According to the author, “the mode of cooking is such as is generally practiced by good notable Yankee housekeepers . . . It is intended for all classes of society and embracing both the plainest and richest cooking.” This edition of New England Cook Book was reproduced by permission from the volume in the collection of the American Antiquarian Society, Worcester, Massachusetts.
