They included troops from not only all parts of Europe but also places as far away as Madagascar, West Africa, and New York City. Beginning in 1789, the French revolutionaries, driven by a new political ideology that placed "the nation" at the center of sovereignty, began aggressively purging the army of men they did not consider French, even if those troops supported the new regime. Such efforts proved much more difficult than the revolutionaries anticipated, however, owing to both their need for soldiers as France waged war against much of the rest of Europe and the difficulty of defining nationality cleanly at the dawn of the modern era. Napoleon later faced the same conundrums as he vacillated between policies favoring and rejecting foreigners from his army. It was not until the Bourbon Restoration, when the modern French Foreign Legion appeared, that the French state established an enduring policy on the place of foreigners within its armed forces. By telling the story of France’s noncitizen soldiers—who included men born abroad as well as Jews and blacks whose citizenship rights were subject to contestation—Christopher Tozzi sheds new light on the roots of revolutionary France’s inability to integrate its national community despite the inclusionary promise of French republicanism. Drawing on a range of original, unpublished archival sources, Tozzi also highlights the linguistic, religious, cultural, and racial differences that France’s experiments with noncitizen soldiers introduced to eighteenth- and nineteenth-century French society. These papers deal with the various scientific and technical aspects, designs, and technology of refrigeration used in food, as well as advances in air-conditioning, and heat pumps. One paper discusses the refrigeration of meat, fruit, or vegetables, and the reaction rate of proteolysis in low temperatures. The paper points out that meat preservation by freezing is not economical below 60 degrees centigrade citing the reason that cathepsines are still catalytically active in lower temperatures. Other papers discuss the effects of freezing of beef, pork, turkey, chicken, sweet corn, spinach puree. As regards fruit and vegetable storage, the air needs to be purified to inhibit infections, retard fungal or bacterial growth, and dissipate ripening gases or foul odors. Another paper examines the reasons for doing away with floor insulation in refrigeration plants used in storing fresh meat during the summer and winter months. This collection is suitable for engineers in the area of refrigeration, and also for food technologists involved in food research and preservation.

Edward James Kolla explains that between 1789 and 1799, the idea that peoples ought to determine their fates in international affairs, just as they were taking power domestically in France, inspired a series of new and interconnected claims to territory. Drawing on case studies from Avignon, Belgium, the Rhineland, the Netherlands, Switzerland, and Italy, Kolla traces how French revolutionary diplomats and leaders gradually applied principles derived from new domestic political philosophy and law to the international stage. Instead of obtaining land via dynastic inheritance or conquest in war, the will of the people would now determine the title and status of territory. However, the principle of popular sovereignty also opened up new justifications for aggressive conquest, and this history foreshadowed some of the most controversial questions in international relations today.
