La demande touristique est le résultat de conditions économiques et sociologiques : le niveau de vie, les rapports au travail et aux loisirs, les relations sociales, les attentes environnementales... Comprendre la complexité du phénomène touristique en espace rural nécessite une approche systémique dans laquelle nous utilisons des concepts économiques, sociologiques et géographiques : état de grandeur, représentations sociales, identité, patrimoine, développement rural... Notre démonstration se poursuit par une analyse détaillée des activités touristiques sur un espace donné du sud-ouest de la France : la basse Ariège. Désirs de liens sociaux, de distinction, de cadre naturel mais aussi de liberté vont expliquer, de la part des touristes, des comportements de «zappeurs» parfois en décalage avec le discours produit. Les composantes non-marchandes des produits touristiques sont déterminantes dans la qualité perçue par les touristes. L'offre touristique correspond à ces attentes par la diversité des produits proposés et s'appuie sur une identité territoriale homogène permise par la valorisation d'un patrimoine collectif. La régulation territoriale est indispensable au développement du tourisme rural car elle préserve sa diversité et donc sa différenciation et son attractivité. L'organisation de filière favorise la communication, la promotion et la qualité des prestations tangibles. Les formes de production et d'organisation territoriale du tourisme en espace rural contribuent à sa dynamique et constituent un avantage comparatif, non pas en terme de coût mais en terme de qualité.
