There was a time when one felt assured that the ladies would prefer light meat; but women have learned that dark meat is juicy and fine-flavored, and even the long-despised drumstick is now the first choice of many. One may always be safe in cutting across the grain in all joints. Even the most tender piece of meat will be tough if it is cut with the grain, i. e., with the length of the fiber.
