Book excerpt: An Englishman, William Shaw was in South Australia when he heard of the California gold rush, and he sailed across the Pacific from Adelaide in 1849. Golden dreams and waking realities (1851) describes that voyage, his visit to San Diego and his landing in San Francisco. Then follows an account of the long trip to the gold fields and details of life as a prospector in the international community of the camps. Leaving the mines for Stockton, Shaw is befriended by Mission Indians. Leaving Stockton for San Francisco, Shaw takes a series of odd jobs in the city before moving on the Mission of Dolores until the New Year, when he finds passage back to Australia, all the while recording the social life and business activities he saw. Next he records the changes observable in Hawaii on his return voyage, a visit to Samoa, and his reception on his landing at Sydney.

Shaw, an Englishman, travelled to California from Australia on board the Mazeppa, the first ship to leave South Australia for the gold diggings. Shaw's descriptions of life in the mines are quite vivid, as per Kurutz: 'He witnessed a bloody battle between mining companies, discrimination against foreign miners, the horrible death of a fellow miner by an insect bite, and poor medical practice. He described in graphic detail the miners' horrendous living conditions, mining methods, and the day-to-day struggle for survival.' As Shaw writes in his preface, his work gives 'fresh evidences of the demoralizing effects of the California gold mania.' After his experiences in the mines he returned to San Francisco and worked for a time at Mission Dolores, and provides an excellent description of the venerable mission. Smith left San Francisco to return to Australia, and stopped at Hawaii, describing its business district, markets, and social life. He attended a performance of Shakespeare's RICHARD III at which Kamehameha III was present and where several Sydney emigrants behaved in a rowdy manner"--

From Canton Restaurant in 1849 to Panda Express today, Chinese food history in America spans over 150 years. Chinese 'Forty-niners' were mostly merchants and restaurateurs who migrated here not to dig gold but to do trade. Racism against the Chinese slowed down the growth of the Chinese restaurant business in the late 19th century, but it made a rebound in the format of chop suey. From 1900 to the 1960s, chop suey as imagined authentic Chinese food attracted numerous American customers including Jewish Americans as its collective fan. Then the real Chinese food such as Hunan, Sichuan or Shanghai cuisine replaced chop suey houses in the 1970s following the arrival of new Chinese immigrants after immigration reform in 1965.
