Caucasian cuisine also has a special feature, these are various sauces, which are also made from herbs. The dishes are served along with the sauce, but it should be individual for each dish. This is done in order to emphasize the taste of meat, fish, and vegetable dishes. In the Caucasus, the well-known "Adjika" is very popular, which is made from red pepper, some garlic, various coriander herbs, and, of course, vinegar. Also very popular is the Chakhokhbili sauce, which, most importantly, has a large number of onions.
