This book was released on 2017-01-04 with total page 1103 pages. Available in PDF, EPUB and Kindle. Book excerpt: This is the Student Study Guide and Solutions Manual to accompany Organic Chemistry, 3e. Organic Chemistry, 3rd Edition is not merely a compilation of principles, but rather, it is a disciplined method of thought and analysis. Success in organic chemistry requires mastery in two core aspects: fundamental concepts and the skills needed to apply those concepts and solve problems. Readers must learn to become proficient at approaching new situations methodically, based on a repertoire of skills. These skills are vital for successful problem solving in organic chemistry. Existing textbooks provide extensive coverage of, the principles, but there is far less emphasis on the skills needed to actually solve problems.

Download or read book Developments in Dairy Chemistry 2 written by P. F. Fox and published by Springer Science & Business Media. This book was released on 2012-12-06 with total page 436 pages. Available in PDF, EPUB and Kindle. Book excerpt: Many of the desirable flavour and textural attributes of dairy products are due to their lipid components; consequently, milk lipids have, tradi tionally, been highly valued, in fact to the exclusion of other milk components in many cases. Today, milk is a major source of dietary lipids in western diets and although consumption of milk fat in the form of butter has declined in some countries, this has been offset in many cases by increasing consumption of cheese and fermented liquid dairy products. This text on milk lipids is the second in a series entitled Developments in Dairy Chemistry, the first being devoted to milk proteins. The series is produced as a co-ordinated treatise on dairy chemistry with the objective of providing an authoritative reference source for lecturers, researchers and advanced students. The biosynthesis, chemical, physical and nutritional properties of milk lipids have been reviewed in eight chapters by world experts. However, space does not permit consideration of the more product-related aspects of milk lipids which play major functional roles in several dairy products, especially cheese, dehydrated milks and butter.

Download or read book Lipids in Foods written by Frank D Gunstone and published by Elsevier. This book was released on 2013-10-22 with total page 185 pages. Available in PDF, EPUB and Kindle. Book excerpt: Lipids in Foods: Chemistry, Biochemistry and Technology provides basic information on the biochemistry and technology of the fatty acids or lipids. This book notes that natural and processed fats and oils, whether of animal or vegetable origin, play a significant role in the economy of several countries including both oil-producers and oil-users. These materials are used extensively, but not exclusively, in the food industry. The first 10 chapters cover the basic chemistry and biochemistry of the fatty acids and their natural derivatives. These topics include an account of the chemical structure, separation, analysis, biochemistry, physical properties, chemical properties, and synthesis of these compounds. The remaining chapters include the recovery of fats and oils from their sources and the processes of refining, bleaching, hydrogenation, deodorization, fractionating, and interesterification. A segment is devoted to margarines and shortenings and to the problems of flavor stability and antioxidants. This text will be valuable to students wishing to know more about lipids and to those involved in this field of study.

Download or read book Recent Progress in Surface Science written by J. F. Danielli and published by Elsevier. This book was released on 2013-10-22 with total page 361 pages. Available in PDF, EPUB and Kindle. Book excerpt: Recent Progress in Surface Science, Volume 3 covers topics on the structure and mechanisms of the cell membranes. The book discusses the incorporation of chemisorbed species; the recent developments in the study of epitaxy; and the "diffusion" or "hydride" component of overpotential at cathodes of the "platinum metals". The text also describes the mechanism of hydrogen exchange in proteins; the nuclear magnetic resonance studies of lipids, lipoproteins, and cell membranes; and the monolayers of synthetic phospholipids. The formation, electrical properties, transport, and excitability characteristics of black lipid films; the structure of biological membranes: the lamellar versus the globoid concept; and some aspects of the role of lipids in lipid-protein interactions and cell membrane structure and function are also considered. The book further tackles ordered water and the ultrastructure of the cellular plasma membrane. Chemists, biophysicists, biochemical pharmacologists, and biochemists will find the book useful.
