The author Howard Williams travels back in time to Antiquity and from there moves through the centuries all the way up to his contemporaries in the 19th century. Leo Tolstoy was impressed with 'The Ethics of Diet'; he had it translated into his native Russian and wrote the narrative for the Russian edition. Throughout the ages, many of the world's finest minds detested the eating of flesh and the cruelty that humans inflict on their fellow creatures. Buddha advocated a vegetarian diet for his monks and stated: ""There hath been slaughter for the sacrifice, and slaying for the meat, but henceforth none shall spill the blood of life, nor taste of flesh; seeing that knowledge grows and life is one, and mercy cometh to the merciful."" Pythagoras abstained from eating meat around the age of nineteen as he believed that abstaining from flesh kept the soul pure. Lamblichus, who studied Pythagoras stated that the great mathematician; "Enjoyed abstinence from the flesh of animals, because it is conducive to peace; for those who are accustomed to abominate the slaughter of other animals as iniquitous and unnatural, will think it still more unjust and unlawful to kill a man or to engage in war."" Arthur Schopenhauer, the German philosopher said; ""Since compassion for animals is so intimately associated with goodness of character, it may be confidently asserted that whoever is cruel to animals cannot be a good man."" Plutarch, Seneca, Plato, Shelley and Wagner all grace these pages and many more... Thoreau observes, ""One farmer says to me, ""You cannot live on vegetable food solely, for it furnishes nothing to make the bones with;"" and so he religiously devotes a part of his day to supplying himself with the raw material of bones; walking all the while he talks behind his oxen, which, with vegetable-made bones, jerk him and his lumbering plough along in spite of every obstacle.""

(8) Vegetarianism is contrary to the laws of nature, red in tooth and claw; to kill is natural.(9) It is necessary to destroy life in order to live.(10) Raising food animals in pleasant conditions and killing them painlessly is not cruel.(11) Eating animals is no worse than using them for labour.(12) The rapid death of food animals is preferable to the agonising death of humans. (13) Food animals, free of the fears and dangers experienced by wild animals, are happier.(14) It is better for animals that we use them for food than that they do not exist at all.(15) Vegetarians who eat eggs and diary products are inconsistent.(16) Consistent vegetarians could never kill lice or germs.(17) Flesh-eating is just as aesthitic as vegetarianism.(18) Vegetarians are sentimentalists. (19) Meat eating is necessary for strength.(20) Flesh-food is easier digested than vegetarian food.(21) Flesh diet is necessary in cold climates ("What would become of Eskimoes if all became vegetarians?").(22) What difference does it make whether we eat flesh or non-flesh, so long as the spirit in which we eat be a proper one?(23) Vegetarianism is economically impractical.(24) Vegetarianism is an inconvenient diet.(25) Eating flesh is necessary for developing a manly spirit.(26) How could we exist without leather? Soup? Candles?(27) How could land be fertilised without manure from food animals?(28) If the life of animals be regarded as sacred as human life, civilisation will revert to a primitive condition.(29) If we turn loose all the food animals they will over-populate, overrun the land, starve, lie dead on highways and in the suburbs.(30) We were given permission by God to eat animals.(31) Vegetarians do not give sufficient priority to more important social reforms (war, poverty, etc.).

Returning to this originating impulse, Value, Beauty, and Nature contends that, to make progress within environmental ethics, philosophers must explicitly engage in environmental metaphysics. Grounded in an organicist process worldview, Brian G. Henning shows that it is possible to make progress in key debates within environmental philosophy, including those concerning the nature of intrinsic value; anthropocentrism; hierarchy; the moral significance of beauty; the nature of individuality; teleology and the naturalistic fallacy; and worldview reconstruction.
