The shortage in the supply during recent weeks has hence made it a subject of keen and universal interest. This pamphlet is published by the National Bank of Commerce in New York as part of the bank's effort to furnish in easily available form information on subjects of special and immediate significance to the industrial, commercial and financial community. It is the second of a series dealing with commodities of special importance from the standpoint of foreign trade. The first of the series, entitled "Exports of Raw Cotton from the United States to the Leading European Neutrals, 1900-1917," appeared in September, 1917. The Foreign Department of this Bank is in close touch with the rapid development which is now taking place in the foreign trade of the United States, and as data on other commodities are assembled, similar studies will appear. This pamphlet has been sent to those to whom it is believed the subject will be of special interest. For most of history, humans did without refined sugar. After all, it serves no necessary purpose in our diets, and extracting it from plants takes hard work and ingenuity. Granulated sugar was first produced in India around the sixth century BC, yet for almost 2,500 years afterward sugar remained marginal in the diets of most people. Then, suddenly, it was everywhere. Book excerpt: Assessing a unique collection of more than eighty images, this innovative study of visual culture reveals the productive organization of plantation landscapes in the nineteenth-century Atlantic world. These landscapes—from cotton fields in the Lower Mississippi Valley to sugar plantations in western Cuba and coffee plantations in Brazil's Paraiba Valley—demonstrate how the restructuring of the capitalist world economy led to the formation of new zones of commodity production. By extension, these environments radically transformed slave labor and the role such labor played in the expansion of the global economy. Artists and mapmakers documented in surprising detail how the physical organization of the landscape itself made possible the increased exploitation of enslaved labor. Reading these images today, one sees how technologies combined with evolving conceptions of plantation management that reduced enslaved workers to black bodies. Planter control of enslaved people's lives and labor maximized the production of each crop in a calculated system of production. Nature, too, was affected: the massive increase in the scale of production and new systems of cultivation increased the land's output. Responding to world economic conditions, the replication of slave-based commodity production became integral to the creation of mass markets for cotton, sugar, and coffee, which remain at the center of contemporary life.

Book excerpt: Plantations, especially sugar plantations, created slave societies and a racism persisting well into post-slavery periods: so runs a familiar argument that has been used to explain the sweep of Caribbean history. Here one of the most eminent scholars of modern social theory applies this assertion to a comparative study of most Caribbean islands from the time of the American Revolution to the Spanish American War. Arthur Stinchcombe uses insights from his own much admired Economic Sociology to show why sugar planters needed the help of repressive governments for recruiting disciplined labor. Demonstrating that island-to-island variations on this theme were a function of geography, local political economy, and relation to outside powers, he scrutinizes Caribbean slavery and Caribbean emancipation movements in a world-historical context. Throughout the book, Stinchcombe aims to develop a sociology of freedom that explains a number of complex phenomena, such as how liberty for some individuals may restrict the liberty of others. Thus, the autonomous governments of colonies often produced more oppressive conditions for slaves than did so-called arbitrary governments, which had the power to restrict the whims of the planters. Even after emancipation, freedom was not a clear-cut matter of achieving the ideals of the Enlightenment. Indeed, it was often a route to a social control more efficient than slavery, providing greater flexibility for the planter class and posing less risk of violent rebellion.
