Book excerpt: Abstract: Information is provided to assist the understanding and effectiveness of Expanded Food and Nutrition Education Program (EFNEP) workers in dealing with nutritional problems in low-income families. In addition to problems directly related to nutrition, low-income families often have para-nutritional problems that make the implementation of nutrition recommendations difficult. Awareness of these problems is essential if nutritional gains are to be made in such families. Para-nutritional problems of low-income homemakers include: finances; self-image; homemaking image; diet rigidity; psychological handicaps; marital conflicts; and insufficient health attention. The guide is intended as a starting point, continuing reference, and a problem-sorting model for EFNEP aides; it is not intended to serve as a how-to manual. While both nutritional and para-nutritional problems of low-income families are discussed, no attempt has been made to treat all possible problems. An annotated bibliography of references suggested in the discussion of nutritional problems, and a compilation of miscellaneous appropriate teaching resources, also are provided. (wz).

Book excerpt: Abstract: This analysis deals with the status of the first 7 years of the Expanded Food and Nutrition Education Program (EFNEP) operation and its status related to congressional mandate. The analysis responds to the question, "Is the EFNEP helping families acquire knowledge about nutrition and change their eating habits?" From the beginning of the program through June 1974, more than 24,000 aides have been trained and worked with 1,077,000 families. Approximately 2 million youth have participated in the EFNEP. Now about 5,300 aides are working with approximately 330,000 families annually. Each paraprofessional works with about 51 families.

Book excerpt: Abstract: The study showed that about 184,000 low-income families participated in the Extension Service's Expanded Food and Nutrition Education Program (EFNEP) prior to October 1969. A sample showed that family incomes were very low--less than $2,700, of which more than a third was spent for food. Families with annual incomes of less than $1,200 per year spent nearly one-half for food. Most families were urban, members of minority groups, and had homemakers with relatively low educational levels. Food consumption practices of homemakers upon entering the program indicated that many families had poor diets. Foods in the milk, fruit and vegetable group were most often lacking in diets. After 6 months of EFNEP participation substantial, improvements in food knowledge and consumption practices were evident, particularly in the consumption of foods in the milk, fruit, and vegetable groups. Homemakers with poorest diets showed more improvement than those who had better initial food consumption practices.
