Book excerpt: The purpose of this research is to obtain the information necessary to develop an appropriate nutrition education program for the members of Westminster Presbyterian Church, a suburban congregation of 1305 predominately white, middle-class members in West Chester, Pennsylvania. The newly formed Health Advisory Committee conducted a survey of the membership's perceived healthcare needs in the spring of 1998. The tabulation of the results of this survey indicated that 25% of the respondents are interested in obtaining information about healthy eating; 30% expressed an interest in weight control. Because the information obtained by this survey is of a general nature, the goal of this research is to clarify the unique nutrition education needs of this population. A high fat, low fiber diet and over-weight are all risk factors for the development of chronic disease. The Food Guide Pyramid, which was developed as a tool for putting the Dietary Guidelines for Americans into action, can be tailored to emphasize specific health goals. Most Americans recognize the benefit of eating a low fat diet, but feel that adopting a healthy eating style is too difficult for them. The "Project LEAN Resource Kit" (1995) provided invaluable information for tailoring a healthy eating program to help participants overcome their perceived barriers to changing their eating habits. "Search Your Heart: A Church-Based Heart Health Program" (1997) addressed specific strategies for utilizing a religious commmunity to encourage people to adopt new eating pattems. These concepts were incorporated into the creation of a pilot healthy eating class. Three existing weight control programs were investigated and will be presented to the congregation for their review at a future time. The pilot class included a pretest, intended to expose gaps in the participants' knowledge, and an evaluation form to clarify what this population expects to receive from a healthy eating class. This session, offered at 7 PM on a Thursday evening, was open to all members of the church. Announcements about the class were placed in the church newsletter, Sunday Bulletin and made orally from the pulpit the Sunday preceding the program. No one attended the class. Members who had previously expressed an interest in the class were contacted to inquire about their absence. Scheduling was the major reason for non-attendance. Six people had other commitments either at the church or in the community, and three people expressed childcare issues that interfered with their attendance. In addition, strong church-wide support was not immediately available for this project due to: the newness of the Health Advisory Committee, the on-going search for a new pastor and the completion of a major building project. At this time it was not possible to answer the question posed by this research. If the pilot session can be scheduled into some of the church's existing classes and programs during the next several months, it should be possible to ascertain specific topics the congregation would like to have included in a future series of healthy eating classes.
