Book excerpt: Honey mesquite (Prosopis glandulosa Torr.) is a potential forage resource due to its high protein content. However, consumption by ruminants is limited by secondary compounds. Our main hypothesis was that honey mesquite could represent a viable livestock foraging resource in the Chihuahuan Desert during periods of low forage quality. The objective of the first study was to determine if feeding activated charcoal could increase intake of honey mesquite leaves by lambs. Twenty wether lambs (36.6 kg ± 0.6 SE) were randomly assigned to four levels (0, 0.33., 0.66 and 1 g · kg−1 of BW) charcoal supplement. No differences (P = 0.52) in the intake of mesquite leaves were detected among supplement levels. However, consumption of mesquite leaves varied greatly among lambs, ranging from 1.24 to 6.25% of the diet. For the second study, phenological changes in the nutrient content of mesquite leaves, flowers and pods were assessed at 2-week intervals during 2012. Crude protein (CP) content of leaves decreased ( P 0.05) from 25.4 to 10.8%, while acid detergent fiber (ADF) and neutral detergent fiber (NDF) increased (P
