Book excerpt: The first demonstration of the existence of a vitamin and the full recognition of this fact are often attributed to the work of McCollum, who found that a sub stance in butterfat and cod-liver oil was necessary for growth and health of ani mals fed purified diets. It became obvious that an organic substance present in microconcentrations was vital to growth and reproduction of animals. Following the coining of the word vitamine by Funk, McCollum named this fat-soluble sub stance vitamin A. We can, therefore, state that vitamin A was certainly one of the first known vitamins, yet its function and the function of the other fat-soluble vitamins had remained largely unknown until recent years. However, there has been an explosion of investigation and new information in this field, which had remained quiescent for at least two or three decades. It is now obvious that the fat-soluble vitamins function quite differently from their water-soluble counter parts. We have learned that vitamin D functions by virtue of its being converted in the kidney to a hormone that functions to regulate calcium and phosphorus metabolism. This new endocrine system is in the process of being elucidated in detail, and in addition, the medical use of these hormonal forms of vitamin D in the treatment of a variety of metabolic bone diseases has excited the medical com munity.

Book excerpt: Every country in the world is concerned with the nutritional status of its population and in utilizing its natural food resources in the most effective way possible. Surveys based on food intakes and food compositional data are being conducted with the object of establishing recommended intakes of vitamins. These recommendations are constantly being changed as new knowledge comes to light. Analytical techniques using physicochemical and microbiological methods have been largely developed to determine the total vitamin content of a food commodity or diet using the most rigorous extraction method commensurate with the stability of the vitamin. The extraction procedures frequently involve prolonged heating of suitably prepared food samples at extremes of pH to liberate vitamins from chemically bound forms in the food matrix or to remove a preponderance of fat from fatty foods. For several vitamins the data obtained by these means grossly overestimate the nutritional value of the food because the human digestive system fails to liberate bound vitamin forms for subsequent absorption by the intestine. This statement is borne out by reports of vitamin deficiency in situations where the dietary supply of vitamin is adequate on the basis of conventional analysis. Various research labora tories are directing their effort toward the estimation of bioavailable vitamin, i. e. the proportion of vitamin in the food which is available for utilization by the body. So far, few data have been published and there are many gaps in the knowledge required to interpret experimental results.

Hood, Oregon, entitled "Vitamin B-6 Analyt ical Methodology and Criteria for Assessing Nutritional Status". The papers which follow are the proceedings of that Workshop and represent the combined works of 36 scientists from across the United States and Canada. In addition to the 19 papers, there were seven short presentations which we consider to be at the very frontiers of analytical methods and status assessment for vitamin B-6. These reports discussed such areas as production of specific antibodies to the various vitamers, the synthesis of deuterated vitamers, comparisons of ultraviolet, fluorescence and elctrochemical deter minations of the vitamers and the identification of polyamine pyridoxal Schiff bases in urine. Those reports are not included in this book solely due to their highly tentative and preliminary findings, not because we considered them of any less importance than the papers presented herein. In fact, these reports may well provide the foundations upon which subsequent workshops are devel oped. The feeling for the need of such a Workshop in part grew out of a previous workshop held at the Letterman Army Institute of Research, San Fra"ncisco, California, 11-12 June 1976.
