Book excerpt: Excerpt from Vanilla Curing and Its Chemistry The respiration rate was determined at various intervals during the curing process in beans killed with ethylene gas, with hot water, and by freezing The respiration rate of a lot of beans subjected to ethylene gas increased In 1 hour after killing from 66 to 102 milli grams per kilogram per hour, in one killed in hot water the rate increased from 79 to 123, and in another killed by freezing it de creased from 79 to 73 milligrams per kilogram per hour. In all cases after the wilting the rate of carbon dioxide evolution decreased until during the conditioning period the rate was practically negligible.
