Book excerpt: Excerpt from Types and Market Classes, of Live Stock During the past eight years there has been added to the curriculum in most of our agricultural colleges a new course dealing with the types of farm animals, market demands, and market classes of live stock. More properly speaking, it has been inserted at the very beginning of the work in animal husbandry, forming, as it logically does, the foundation course in the study of that important branch of agriculture. This is a soundly practical study; the student is brought to a much clearer conception of values and a much better appreciation of live stock than was possible under the former system of teaching. Recognizing the need of a text on this subject which could be placed in the hands of students, the writer prepared and printed a loose-leaf edition which has been used at Ohio State University during the past three years. This met with favorable comment, and requests have been made that the material be put into book form. After careful revision and the addition of a number of illustrations, this is now attempted in the hope that students and teachers and the general reader as well may find such a book useful. The arrangement of the subject-matter corresponds to the order usually followed in teaching, but may be varied as desired, each section of the book - Cattle, Sheep, Hogs, and Horses - being complete in itself. The writer desires to express his indebtedness to numerous commission men, buyers for the packing houses, and others who have kindly given their assistance during his quests for information, and to numerous experiment station publications, particularly the series of excellent bulletins issued by the Illinois Station setting forth the results of their study of the Chicago and St. Louis markets. Acknowledgment of valued assistance is due my present co-workers, and also Professors C. S. Plumb and F. R. Marshall at Ohio State University. The author, however, desires to call attention to the fact that not since 1888 has a volume devoted to the breeds of horses, cattle, sheep, and swine been published in America. The most recent work devoted to the breeds entirely omitted a considera tion of the horse. Further than this but very few books have thus far been published in the English language that have been strictly breed studies. This book differs somewhat from others that have preceded it. A number of breeds have received recognition for the first time, these being the ass, the mule, the angora and milch goats, all animals of importance in certain localities. The more important or better known breeds have received more detailed considera tion than those which may be regarded as the lesser known, and have been so ranked in the make-up of the book. In numerous instances much new historical information has been gathered. During the past twenty years a great amount of evidence bear ing on breed merit has been secured at the agricultural experi ment stations, at expositions, on race courses, and at fair grounds. In the breed reviews in this work much of this recent evidence is given a place. Brief consideration is also given to some of the more important foundation families or tribes, and to individual animals that have made a deep impression upon the breed. The author has taken the liberty of commenting on the weak as well as on the strong points of the breeds, but this has been done in a nonpartisan spirit, in harmony with the views of capable critics. With grazing conditions favorable in most sections the movement of stock and feeding cattle to primary markets is light but the demand is also light and centers chiefly on the higher quality grades of stock steers. The desired kinds are scarce and are selling up'close to heavier weight cattle on the feeder o1der. During the past week the greater' portion of the latter were in fai1 flesh condition and usually found their best outlet to killers. Common and plain stock'er stuff found a very narrow market. Many prospective buyers of stock and feeding steers show a disposition to defer purchasing until the western range cattle run is under way or the future of the fat cattle market appears more clearly defined. Stock steers closed 250; to 5011 higher for the week at Kansas City but prices at other points under review we1e steady to_ lower. A 25[ decline on both stockers and feeders was fairly general at Chicago. A large per centage of the she stock now reaching leading ma1ket centers is grassy' 'and buyers are demanding greater price differentials be tween that class oi stuff and the few grain-fed cows and heifers. That fact carries bulk transactions far below top quotations. Well conditioned dry-fed heifer yearlings and the few choice heavy kosher cows com ing are, by virtue of their scarcity, selling high relative to steers. The bulk of the butcher cows and heifers at Chicago during the week cashed at $5 to $7, although choice, dry-fed heifer yearlings sold up to $8. 50 and occasionally choice kosher cows to Most of the grassy heifers sold there below $6, and grassy cows between $4 ane $5 were numerous. Canners and cutters were in light supply and narrow demand and sold largely between $2 and $3. 75, with some canners down to $1. 50 at St. Paul and Missouri River markets.
