Book excerpt: The purpose of this study was to determine the role of acculturation in the food consumption patterns of low income Hispanic women living in Texas and enrolled in the Women, Infants, and Children (WIC) Program by testing the following hypotheses: a) There are significant differences in consumption of fruit and vegetables by selected socio-demographic variables; and, b) less healthy food consumption patterns are associated with higher levels of acculturation in health-related research involving low-income Hispanic women living in Texas. A secondary-data analysis of the responses to the Texas Food & Nutrition (TEXFAN) questionnaire was performed. TEXFAN is a 122-item survey designed to measure WIC participants' consumption behaviors and to assess the impact of new food packages in Texas' WIC program. A total of 3,336 adult, non-pregnant women self-identified as having Hispanic ethnic background of all races were considered for this study. Analysis of Variance and Kruskal-Wallis tests showed significant differences in nutritional practices among Hispanic women for age, educational attainment, employment status, race, area of residence, and acculturation. Logistic Regression analysis confirmed the hypothesis that lower levels of acculturation are associated with healthier food consumption patterns. The majority of respondents (70.7%, N=2,358) did not consume the recommended five servings of fruits and vegetables a day; therefore, do not have healthy patterns of food consumption. Consequently, the majority of respondents (70.0%, N= 1,709) has a weight statuses above normal and at a higher proportion than women in the State of Texas and the nation. Acculturation continues to interest social and behavioral researchers but variations on conceptualization, definition, operationalization, and measurement negatively impact generalizability and applicability of results. Interventions not considering acculturation are not likely to be successful. Research has to include community, ecological, cultural and contextual factors (e.g., machismo, accessibility to sidewalks, availability of fresh healthy foods, etc.). Development of effective intervention programs should be aimed to increase consumption of healthy food and an adherence to the recommendations of the "Healthy Plate" and the "Dietary Guidelines for Americans 2010" among Hispanics. Also, interventions should generate necessary skills among Hispanics for empowering them to sustain proper nutritional behaviors and overcome barriers.

Book excerpt: "The purpose of this study was to: (1) determine the differences in nutrition knowledge, attitudes, beliefs (KAB), and self efficacy among low income African American and Hispanic women; (2) identify the associations that these variables have on diet quality and weight status; (3) identify some barriers to healthy eating; and (4) to document if the level of acculturation, among Hispanics, has any effect on KAB. Data from three separate studies were combined and analyzed. The total sample included African Americans (N=92), high acculturated Hispanics (N=73), and low acculturated Hispanics (N=199). Descriptive statistics and bivariate analyses were used to identify associations between KAB and body mass index (BMI) and diet quality. The majority of African Americans had good knowledge in nutrition while Hispanics had fair knowledge. The differences were, however, non significant. Attitudes toward eating a healthy diet were significantly different only in terms of high fiber and low fat consumption. More Hispanics (96.7%) than African Americans (90.2%) believed that it is important to consume a healthy diet, however both groups had poor dietary intakes. A computed KAB score showed no significant relation to individuals' weight status or diet quality. However, attitudes and beliefs about healthy foods strongly correlated with participants' weight or diet consumption. The most common barrier to consuming a healthy diet reported by both groups was the cost of healthy foods. The level of acculturation had a significant influence on some nutrition attitudes and belief. More high, than low acculturated Hispanics acknowledged the importance fiber and low fat diets. However, low acculturated Hispanics were more likely to have the belief that healthy foods will keep one healthy. It is therefore recommended for educational programs to focus on these variables when addressing obesity and poor dietary intake among low income minority groups."--Abstract from author supplied metadata.

As a result, foreign born Latinos experience a shift in norms, values, behaviors, and attitudes towards non-Latino (Western) culture when relocating to the United States. Acculturation among Latina women has been associated with behaviors contributing to obesity and may affect dieting behaviors. Behavior change interventions targeting weight loss through diet achieve moderate short term weight loss. Changes, however, are not sustained and disrupt homeostasis. In contrast, intuitive eating offers a non-dieting approach to weight management teaching participants to eat according to physiological hunger and satiety cues. Intuitive eating has been associated with improved physiological and mental health outcomes. A convenience sample of 54 Latina women completed surveys and anthropometric measurements at baseline as part of Valorando Nuestros Cuerpos (Valuing Our Bodies) pilot study. This aim of this study was to assess the relationship between acculturation and intuitive eating among Latina women residing near the United States-Mexico border using a cross-sectional survey. This study examined the relationship between acculturation and intuitive eating using multiple measures of acculturation including Marin's Bi-dimensional Acculturation Scale (BAS), country of birth, years of residence and age at arrival among foreign born, and the Intuitive Eating Scale-2 (IES-2). Pearson's and Spearman's correlation coefficients and a multiple linear regression were run to assess the significance of the variables representing acculturation and intuitive eating (IE). Results indicated the majority of the sample was foreign born, overweight or obese, dominant in Latino culture according to the BAS, and relatively high intuitive eating scores. Contrary to the hypothesis, analyses found no significant relationship between acculturation and intuitive eating. However, the relationship between BMI and intuitive eating approached significance. Possible reasons for lack of significance include volunteer bias from convenience sampling, frequent border crossing, and low levels of acculturation. Further research is needed to validate the translation of the complete IES-2 scale into Spanish and to include a group of Latina women with more variance in generations and ethnic groups. Despite a lack of statistical significance, intuitive eating remains a promising approach to weight maintenance for Latina women.

Book excerpt: Acculturation has been associated with health behaviors, and to a lesser extent, health outcomes among Latinos; however, inconsistencies exist regarding the nature of these relationships. Moreover, little is known about the underlying mechanisms linking acculturation to Latino health outcomes. The current study examined the relationship between acculturation, behavioral risk factors, and cardio-metabolic dysfunction in Mexican American women, and evaluated the contribution of social and economic pathways to observed associations. Participants were a random sample of 302 Mexican American women (mean age 49.77 years), recruited from communities with wide-ranging socioeconomic status (SES) located on the United States (US) side of the Tijuana (Mexico) - San Diego (US) border. Women underwent a clinical exam and completed a battery of questionnaires including demographic (age, US exposure, education, and income), cultural (language acculturation, familism, fatalism, religiosity), social (social support, sociability), and behavioral (leisure-time physical activity, sedentary behavior, walking, fruit and vegetable servings, and dietary fat) variables. Confirmatory factor analyses (CFA) and structural equation models (SEMs) were performed in the total sample. CFAs revealed single latent constructs for English language acculturation (childhood language, English proficiency, and adult language patterns), SES (education and income), resilient cultural values (familism and religiosity), and social resources (social support and sociability). SEMs showed statistically significant direct effects of English language acculturation to more sedentary behavior and resilient cultural values to more self-reported walking. In addition, the indirect effects of US exposure to more sedentary behavior through language acculturation, English language acculturation to more sedentary behavior through SES, and resilient cultural values to more fruit and vegetable servings through social resources were also significant (CFI = 0.90, RMSEA = .10, SRMR = 0.04). Finally, significant mediated effects were found for English language acculturation to lower cardio-metabolic dysfunction via higher SES, and higher SES to lower cardio-metabolic dysfunction via lower fatalism (CFI= .89, RMSEA = .11, SRMR = .04). Behavioral variables did not appear to mediate the acculturation and cardio-metabolic dysfunction relationship. Acculturation and related cultural variables were associated with behavioral risk factors and cardio-metabolic dysfunction in middle-aged Mexican American women. SES and social resources may represent relevant pathways in explaining these associations.

Theory posits the important role of family and family members on individuals' health behaviors (e.g., diet). However, few studies examine how children impact their parents' diet. Furthermore, empirical evidence shows that acculturation is an important predictor of diet among Latino adults. The purpose of this dissertation was to examine the role of children, families, and acculturation on mothers' dietary intake and related behaviors. Methods: Chapters 1 and 2 used secondary data from mother-child dyads enrolled in a randomized controlled trial (RCT) and Chapter 3 used primary data collected from mother-child dyads. Chapter 1 used baseline survey data from 314 Latino mother-child dyads to test how children's acculturation and the mother-child acculturation gap was associated with mothers' dietary intake and related behaviors. Building on the results from Chapter 1, in Chapter 2, longitudinal data from 162 dyads enrolled in delayed treatment group of the RCT were used to test the temporal relations of the family environment on traditional mothers' dietary intake and behaviors, and whether these relations differed between mothers of assimilated versus bicultural children. Finally, Chapter 3 used qualitative interview data from mothers and their bicultural (n=11) or assimilated (n=10) children and quantitative data from mothers to explore how children influenced their mothers' dietary intake and behaviors. Results: Chapter 1 provided evidence that accounting for mothers' acculturation, having an assimilated versus a bicultural child was negatively associated with mothers' vegetable intake and positively associated with mothers' sugary beverage intake, percent of calories from fat, and frequency of away-from-home eating. The most at-risk dyads for lower quality diet among mothers were traditional mothers of assimilated children. Chapter 2 found that less positive family interactions around food at baseline predicted more frequent away-from-home eating four months later among mothers of assimilated children. Additionally, more family expressiveness at four months predicted more dollars spent on fruits and vegetables at ten months among mothers of bicultural children. In Chapter 3, participants described how mothers' feeding styles shaped children's food preferences and in return, children's food preferences influenced mothers' dietary intake and behaviors. Discussion: This dissertation found evidence for the important role of children and families on mothers' dietary intake and related behaviors. The findings presented here support the theoretical notion that individuals' health behaviors are directly and indirectly influenced by family-level factors. Further, this dissertation extends previous research on the important role of mothers on their children's dietary outcomes by building evidence for the reciprocating influence of children on their mothers' dietary intake and behaviors.

Book excerpt: The purpose of the study was to examine the relationship between acculturation indicators and metabolic syndrome (MetS) among Hispanic adults living in the Dallas-Fort Worth metropolitan area in Texas. MetS is a pressing public health problem, and Hispanics have the highest prevalence among all ethnic groups in the United States (35.4%). MetS is a cluster of five risk factors (blood pressure, waist circumference, high-density lipoprotein cholesterol, fasting blood glucose, and triglycerides) that increase a person’s risk of developing cardiovascular disease and diabetes. Currently, Hispanics are the second-largest ethnic group in the United States, and more than one-third of the U.S. Hispanic population is foreign-born. As immigrants and subsequent generations are exposed to the mainstream U.S. culture, the process of acculturation impacts their lifestyle behaviors and health. Acculturation indicators (nativity, duration in the United States, and scores from the Short Acculturation Scale for Hispanics) and the five MetS markers were assessed among 128 adult participants. Logistic regression modeling was conducted to predict MetS status (present/not present) by acculturation indicators and covariates (sex, age, and education). Additional analyses were conducted to assess the relationship between each individual MetS marker, acculturation indicators, and the identified covariates. For every one-unit increase in a participant’s duration in the United States (measured in years), the likelihood of having abnormal blood pressure increased by 6% and the likelihood of having abnormal blood glucose increased by 5%. Results indicate increasing exposure to the mainstream American culture negatively impacts health risks and status among Hispanics. The primary treatment for MetS is lifestyle modification that includes regular physical activity, healthy eating, and weight loss. Health care providers can aid in reducing MetS prevalence by raising awareness of the condition and associated risk factors among their patients as well as recommending lifestyle modification to reduce their risk. Study results can aid health educators in planning, implementing, and evaluating health communication campaigns and health education/promotion programs to prevent MetS among Hispanics. Further examination of what changes occur in health behaviors that increase risk of MetS would provide further insight into why duration in the United States is associated with elevated blood pressure and elevated fasting blood glucose levels.

Book excerpt: Acculturation, defined as the process of adopting the behaviors and beliefs of the dominant host culture, is often associated with dietary change and negative health outcomes, such as increased risk for obesity and diet-related diseases. The large and rising immigrant population in the U.S. necessitates a better understanding of the acculturation process in order to design appropriate health and nutrition interventions. It is well established that parents play a key role in child and preadolescent nutrition through parenting style and control of the home food environment. However, little is known about the potential influence of parental acculturation on preadolescent children's dietary patterns and habits, frequency and characteristics of family meals, and parent child-feeding behaviors, particularly among families who have lived in the U.S. for a considerable time and whose children have grown up in the U.S. The objective of this study was to quantitatively examine the association between parental acculturation and parent child-feeding behaviors, family meals, and child dietary patterns and habits in families where the primary food-providing parent self-identified as Asian/Asian American ("Asian") or Hispanic/Latino ("Hispanic"). Nativity was used as a proxy measure of acculturation, with foreign-born (FB) parents assumed to be less acculturated than native-born (NB). Sampled participants from nine states consisted of 74 Asian and 134 Hispanic parents or caretakers and their preadolescent children. Survey questions addressed children's intake of foods considered typical of the American diet to determine associations between frequency of consumption and parental nativity. Parent child-feeding behaviors examined were parental encouragement of milk-drinking and breakfast consumption, and discouragement of soda-drinking. Lastly, associations between frequent family meals and meals away from home and parental nativity were examined. Among Asian participants, no statistically significant associations were found between child intakes, family meals, or parenting behaviors among NB versus FB parents. However, among the Hispanic group, parental nativity was significantly associated with several variables. Children of NB parents were more likely to frequently consume hamburgers or hot dogs with cheese, chocolate bars, cupcakes or cake, and soda. By contrast, children of FB parents were more likely to consume raw broccoli and pancakes, waffles, or French toast frequently. NB parents had greater odds of encouraging children's milk intake at lunch. Families with NB parents also had significantly greater odds of consuming dinner together five or more days per week. The findings of this study suggest that parental nativity may have some influence on children's dietary patterns and habits, parent child-feeding behaviors, and family meals among Hispanics. More research is needed in larger, more representative, and culturally specific samples. The results of this study suggest that nutrition interventions targeting Asian and Hispanic families with preadolescent children may benefit families with a wide range of parental acculturation, although some interventions may be slightly more applicable to the more or less acculturated. Potential areas for intervention include coaching parents on effective child-feeding behaviors and strategies for fostering healthy eating practices, promoting quality family meals, and educating parents on the health risks and sources of excess sugar.

Book excerpt: In this dissertation, I seek to examine changes in diet and other food behaviors that take place within and across generations of Mexican immigrants in the U.S.I present four studies, each of which addresses a set of common hypotheses. My first hypothesis is that well-documented shifts in diet that occur as Mexican immigrants spend time in the U.S and become more acculturated may represent just one aspect of a broader shift in food behaviors. I use data from the 2005-2010 National Health and Nutrition Examination Survey (NHANES) and survey data that were collected as part of a community intervention study in East Los Angeles, California (East L.A. Community Survey) to examine the relationship between linguistic acculturation and a variety of food purchasing, preparation, and consumption behaviors among Mexican Americans. I present evidence of a broad shift in food behaviors as Mexican Americans acculturate, characterized by decreased home meal preparation and increased reliance on prepared and processed foods from restaurants and other food sources. My second hypothesis is that not all changes in food behaviors that occur within and across immigrant generations are the result of exposure to and adoption of U.S. culture, and thus should not be thought of as `dietary acculturation.' Rather, I argue that much of the change in food behaviors that occurs among Mexican immigrants and their offspring may result from shifts in social characteristics such as income, education, and urban exposure. For example, many immigrants migrate from rural areas in Mexico to large urban areas in the U.S., and educational attainment and socioeconomic status improve quickly among immigrants and their offspring. I argue that these important social factors would affect food behaviors in any country, and thus it is important to differentiate between their influence and shifts in food behaviors caused by exposure to and adoption of U.S. culture. I investigate my second hypothesis using data from adult participants in the 2006 Encuesta Nacional de Salud y Nutrición (National Health and Nutrition Study), a large population-based study conducted in Mexico. I examine patterns in food behaviors among Mexican adults, finding that food spending and consumption of foods prepared outside of the home increase dramatically with income, education, and urban versus rural residence. Thus, my findings suggest that many of the social differences between more-acculturated Mexican Americans from their less-acculturated counterparts would result in large social gradients in food behaviors within the Mexican population, even in the absence of exposure to and adoption of U.S. culture. I also examine my second hypothesis using data from the 2005-2010 NHANES and the East L.A. Community Survey. I assess whether any observed relationship between linguistic acculturation and food behaviors is explained by income, education, and other sociodemographic differences between more- and less-acculturated Mexican Americans. My findings suggest that much of the relationship between linguistic acculturation and food behaviors is explained by these other social factors, and thus not all changes in food behaviors that occur within and across immigrant generations should be labeled as 'dietary acculturation.'
