Book The Physical Chemistry of the Proteins Classic Reprint

Download or read book The Physical Chemistry of the Proteins Classic Reprint written by Thorburn Brailsford Robertson and published by . This book was released on 2015-07-01 with total page 506 pages. Available in PDF, EPUB and Kindle. Book excerpt: Excerpt from The Physical Chemistry of the Proteins The Proteins, with which, as its title indicates, this work has most particularly to deal, have, ever since the publication of the classic researches of Graham, been generally recognized as typical examples of that class of substances which Graham designated "Colloids." This work, therefore, although primarily concerned with the physical chemistry of a limited section of the class, may also, in some measure, be regarded as contributing to an analysis of the properties and behavior of colloids in general, in so far as these permit of illustration by the properties and behavior of the various members of the protein group. The leading problems in every field of chemical investigation are, to a large extent, determined by the salient properties of the substances which form the subject of inquiry, and for this reason a thorough acquaintance with what may be termed the "descriptive chemistry" of any group of substances is prerequisite to a successful attempt to interpret their behavior. If we were to endeavor to interpret the behavior of the proteins solely in the light of preconceptions derived from the study of the chemistry of the metals, for example, or the simpler organic compounds, we would find that the behavior of the proteins displays merely a bewildering variety of inconsistencies. Their "amphoteric" character, their multiple basicity and acidity, their instability in aqueous solution and, above all, the enormous mass and catenary configuration of their molecules, confer upon them properties which are comparatively unfamiliar in other fields of chemistry or else exaggerate properties which are normally displayed by the simpler chemical bodies only to a comparatively negligible degree. The proteins in this respect are not exceptional. Thus the mode of investigation and the interpretation of the behavior of the various lipoids must primarily be conditioned by their very general insolubility in water and instability in the presence of oxygen. Book excerpt: Unlike some other reproductions of classic texts (1) We have not used OCR(Optical Character Recognition), as this leads to bad quality books with introduced typos. (2) In books where there are images such as portraits, maps, sketches etc We have endeavoured to keep the quality of these images, so they represent accurately the original artefact. Although occasionally there may be certain imperfections with these old texts, we feel they deserve to be made available for future generations to enjoy.

Book Colloid Chemistry of the Proteins Vol 1

Download or read book Colloid Chemistry of the Proteins Vol 1 written by Wolfgang Pauli and published by Forgotten Books. This book was released on 2016-09-23 with total page 158 pages. Available in PDF, EPUB and Kindle. Book excerpt: Excerpt from Colloid Chemistry of the Proteins, Vol. 1: With 27 Diagrams and Numerous Tables The small volume of which Part I. Is here presented has been developed from lectures delivered in the winter term of 1912 - 13. It by no means exhausts the materials of the colloid chemistry of the proteins even up to that date. In response to many requests, it is proposed to collect in perspective the investigations carried out by the author and his co-workers in'the course of many years, prominence being given to the most important results. Such fundamental work of other authors as is relevant has also been included in an attempt to round off the presentation, but for complete data the reader is referred to the well - known works of O. Cohnheim, R. H. A. Plimmer (translated into German by J. Matula), and T. B. Robertson. The second part, to appear within a year, will include the relations of the proteins to neutral salts and to the salts of the heavy metals, to colloids and to ampholytes, the properties of the albumin gels, and, finally, the physical chemistry of the purest albumin so far prepared. I take this opportunity of thanking most heartily Dr. Mona Adolf for her careful and critical reading of the proofs, and also my assistant and collaborator of many years, Dr. Joh. Matula, for drawing the figures. About the Publisher Forgotten Books publishes hundreds of thousands of rare and classic books. This book was released on 2016-06-27 with total page 118 pages. Available in PDF, EPUB and Kindle. Book excerpt: Excerpt from The Chemical Constitution of the Proteins, Vol. 1 of 2 Investigations Upon their Chemical constitution have been carried on now for nearly a century, but it is only during the last ten years that, by the work of Emil Fischer and his pupils, any Clear view has really been obtained of their actual constitution. The main result of these investigations is that the protein molecule is built up of a series of amino acids, which form the basis of their composition, and of which the following have been definitely determined.
