Book Milk Necessary for the Nation s Welfare Classic Reprint

Download or read book Milk Necessary for the Nation s Welfare Classic Reprint written by Edwin Bret Hart and published by Forgotten Books. This book was released on 2017-11-08 with total page 610 pages. Available in PDF, EPUB and Kindle. Book excerpt: Excerpt from Milk Necessary for the Nation's Welfare We are learning that the individual members of this important class of food substances differ among themselves in nutritive value. A pound of protein from cornmeal or wheat flour is not equal to a pound of protein from milk or cheddar cheese or cot tage cheese or any kind of cheese in meeting growth needs. This is probably the most Important fact in a practical sense that farmers and the American public will have to recognize in the future. The building units from the proteins of our cereal grains are not so well suited as those from milk for rapid build-2 ing Of the protein structure of animals. It is particularly in this direction that nature did so well when through the mammary gland she constructed from the blood stream and thus indirectly from certain parts of poor proteins of the food, the proteins for the nutrition of the young. If the cereal grain proteins are used as the sole source of pro tein for the growing animal they will Show an efficiency of less than 30 per cent, while the proteins from milk will reach an efficiency of 65 per cent. In other words, while only 30 per cent Of a pound of proteins from the corn kernel would be stored away, 65 per cent of a pound from milk would be stored by the growing animal. In storing the 30 per cent of proteins from the cereal grains 70 per cent will be wasted, because it does not fit well into the growing structure of the young; but only 35 per cent of the milk proteins will be wasted. Book excerpt: Excerpt from Milk: Its Importance as Food McCollum believes that the achievements of any race of people in science, art, and literature depend more on the milk consumption of that people than on any other factor. In other words, a nation that consumes milk liberally is bound to be a healthy, virile, and productive nation. "The Chinese, Japanese, and the peoples of the tropics generally have employed the leaves of plants as almost their sole protective food. They are characterized by small stature, relatively short span of life, high infant mortality, and by continued adherence to the employment of the simple mechanical inventions of their forefathers." It is said that the Japanese child, fed without cow's milk, requires two or three years longer than the American to reach maturity, while the Japanese farmer of 60 corresponds in health and vigor to the American of 80 years of age. Several diseases which afflict mankind are known to be caused by a faulty diet. Beri-beri, prevalent in the Orient among peoples subsisting almost entirely on degerminated grains, and characterized by extreme nervous debility and degeneration, disappears when protective foods are added to the diet. Pellagra, which is common in localities where the diet is poor, especially where meal made from degerminated corn is used as the chief food, is practically unknown in regions where the protective foods are consumed in liberal amounts. Scurvy appears only among people restricted to a diet of preserved foods devoid of fresh fruits, vegetables, milk, and fresh meat. Rickets is common among the children of the very poor who live on a diet of degerminated wheat, corn, and rice together with tubers and meats. It is quite possible that there is a close connection also between faulty diet and tuberculosis. McCollum says, "An examination of any large groups of people in the cities will show that where there is a high mortality from tuberculosis, milk is not being used to any great extent, and in any large group where milk purchases are large this disease is not a menace. It is well known that in institutions where tuberculosis is successfully treated milk forms the principal article of the diet of the inmates." Do we use sufficient milk in the United States? As a whole, dairy products furnish about one-sixth of the total food of the average American. About the Publisher Forgotten Books publishes hundreds of thousands of rare and classic books. Book Studies of Reconstructed Milk Classic Reprint

Download or read book Studies of Reconstructed Milk Classic Reprint written by Albert F. Stevenson and published by . This book was released on 2015-08-05 with total page 44 pages. Available in PDF, EPUB and Kindle. Book excerpt: Excerpt from Studies of Reconstructed Milk Pure milk contains a variety of substances, which, for convenience in analysis and reference, are conventionally divided into three groups: Fats, solids not fat, and water. The proportions of these three groups in the mixture vary with the breed of cattle, the feed, the season, and other variable conditions, but it will be sufficiently accurate for the present purposes and for illustration to say that normal milk contains 31 per cent fats, 9 percent solids not fat, and 87 1/2 per cent water. At a time when, in the interests of food conservation, the possibilities of desiccated foodstuffs are being developed and their economic advantages exploited, it is unnecessary to dwell at length upon the purely economic benefits which would accrue were it possible to deal with the milk supply of the country and especially, with its problems of storage and transportation, upon a water-free basis. Desiccation in general has two principal advantages: It reduces tho weight of the commodity, thereby simplifying the problem of distribution; and it improves the handling and keeping qualities of perishable foods by doing away with the watery environment necessary for microbial activity. These advantages make it possible to distribute foodstuffs over wide geographical areas and thus to provide markets for those regions in which production is deficient or lacking. They also make possible a seasonal distribution or leveling, whereby tho commodity may be carried over from a season of excessive production into a season of nonproduction. To these manifest advantages, which are common in the entire field of desiccated food, there is added, in the case of milk supplies, a third of equal if not greater importance. This has reference to the sanitary aspects of the milk problem, which have so occupied the attention of public-health workers in recent years. Book excerpt: Excerpt from Milk This volume is simply a collection of essays contributed to the various medical societies and journals during the past seventeen years. It would be vain for the author to claim that there was no other motive than that of love for scientific truth impelling the work. However, as a physician and veterinarian, it cannot be judged dishonest for him to say that there has been a sincere desire to reach the truth and follow it. And, on the other hand, as a dairy man trying to produce the best milk that is within human possibility, there has been, of course, more or less trade interest. Therefore, if these two designs can be allowed without prejudice on the part of the reader, there is hope that the work will benefit others as well as the. Download or read book Milk written by Mark Kurlansky and published by Bloomsbury Publishing USA. This book was released on 2018-05-08 with total page 402 pages. Available in PDF, EPUB and Kindle. Book excerpt: Mark Kurlansky's first global food history since the bestselling Cod and Salt; the fascinating cultural, economic, and culinary story of milk and all things dairy--with recipes throughout. According to the Greek creation myth, we are so much spilt milk; a splatter of the goddess Hera's breast milk became our galaxy, the Milky Way. But while mother's milk may be the essence of nourishment, it is the milk of other mammals that humans have cultivated ever since the domestication of animals more than 10,000 years ago, originally as a source of cheese, yogurt, kefir, and all manner of edible innovations that rendered lactose digestible, and then, when genetic mutation made some of us lactose-tolerant, milk itself. Before the industrial revolution, it was common for families to keep dairy cows and produce their own milk. But during the nineteenth century mass production and urbanization made milk safety a leading issue of the day, with milk-borne illnesses a common cause of death. Pasteurization slowly became a legislative matter. And today milk is a test case in the most pressing issues in food politics, from industrial farming and animal rights to GMOs, the locavore movement, and advocates for raw milk, who controversially reject pasteurization. Profoundly intertwined with human civilization, milk has a compelling and a surprisingly global story to tell, and historian Mark Kurlansky is the perfect person to tell it. Tracing the liquid's diverse history from antiquity to the present, he details its curious and crucial role in cultural evolution, religion, nutrition, politics, and economics.
