Waterhouse in the town of Barrington in 1881. Mr. Waterhouse was also manager of the first co-operative creamery to be established by dairy farmers in New Hampshire, which was located in the Sun cook Valley at Short Falls in the town of Epsom. It opened its doors for business on April 6, 1885. For a period of about two years previous to the introduction of centrifugal cream separators, the milk, after it was received at the creamery, was placed in cans of ice water and the cream al lowed to rise to the surface. A portion of the cream from the morning's delivery was removed late in the afternoon by a hand skimmer, and the remainder allowed to stand until next morning. Mr. Richard B. Hall of North Mon roe was the owner of the first centrifugal cream separator to be used in the state, he having purchased a dairy size machine in March, 1884. The Hanover creamery at Han over was the first co-operative concern in the state to use power machines for separating cream. With the advent of cream separators, other creameries were established in the best farming centers in the West and northern parts of the state. Farmers in the southern portion have found excellent markets for their milk, not only in creameries but among the rapidly increasing pcpu lation of nearby cities and towns. The preceding study2 laid particular emphasis upon the charges levied upon the milk. These charges were analyzed in considerable detail in an attempt to determine not only their amount but the bases upon which they were set. The present study pays attention to what might be termed the physical process of assembling milk from farms to plants, as contrasted with the preceding study which had to do with charges levied on this milk. This attention to the process of milk hauling is not for the purpose of obtain ing knowledge for its own sake, but is expected to be of value in re organizing the marketing structure. Excessive charges may come about in two ways: first, by a failure to keep charges in proper relationship to the cost of the services rendered, and second, by a failure to maintain the physical process of assembly in a condition of maximum efficiency. Book excerpt: Excerpt from Geographic Structure of Milk Prices, 1960-61 In 1960-61, the zone of lowest prices less than per 100 pounds for milk containing percent butterfat extended over northern and central Wisconsin and most of Minnesota. While this zone was larger in 1957-58 than in 1953-54, it contracted sharply in the 3 years from 1957-58 to 1960-61, and was considerably smaller in 1960-61 than in either of the 'two earlier periods (figs. 1 and Rising prices in southern Wisconsin, northern Illinois, and northern Iowa were primarily responsible for this. The western part of the zone remained relatively unchanged between 1957-58 and 1960-61. Price increases, however, in western Ohio, southern Indiana, and Kentucky after 1957-58 shifted the western edge of this zone sharply to the west and north. Within this zone; an island of less-than prices existed in the Peoria Springfield area. The price contour of the north central production region was likewise unchanged from 1957-58 except for a contraction in the southern part of the zone. Higher prices in central Arkansas, northern Mississippi, and most of Tennessee pushed this zone northward.
