Book excerpt: Named a Best Book of 2020 by Publisher's Weekly Named a Best Cookbook of 2020 by Amazon and Barnes & Noble “Every elegant page projects Keller’s high standard of ‘perfect culinary execution’. . . . This superb work is as much philosophical treatise as gorgeous cookbook.” —Publishers Weekly, STARRED REVIEW Bound by a common philosophy, linked by live video, staffed by a cadre of inventive and skilled chefs, the kitchens of Thomas Keller’s celebrated restaurants—The French Laundry in Yountville, California, and per se, in New York City—are in a relationship unique in the world of fine dining. Ideas bounce back and forth in a dance of creativity, knowledge, innovation, and excellence. It’s a relationship that’s the very embodiment of collaboration, and of the whole being greater than the sum of its parts. And all of it is captured in The French Laundry, Per Se, with meticulously detailed recipes for 70 beloved dishes, including Smoked Sturgeon Rillettes on an Everything Bagel, “The Whole Bird,” Tomato Consommé, Celery Root Pastrami, Steak and Potatoes, Peaches ’n’ Cream. Just reading these recipes is a master class in the state of the art of cooking today. We learn to use a dehydrator to intensify the flavor and texture of fruits and vegetables. To make the crunchiest coating with a cornstarch–egg white paste and potato flakes. To limit waste in the kitchen by fermenting vegetable trimmings for sauces with an unexpected depth of flavor. And that essential Keller trait, to take a classic and reinvent it: like the French onion soup, with a mushroom essence stock and garnish of braised beef cheeks and Comté mousse, or a classic crème brûlée reimagined as a rich, creamy ice cream with a crispy sugar tuile to mimic the caramelized coating. Throughout, there are 40 recipes for the basics to elevate our home cooking. Some are old standbys, like the best versions of beurre manié and béchamel, others more unusual, including a ramen broth (aka the Super Stock) and a Blue-Ribbon Pickle. And with its notes on technique, stories about farmers and purveyors, and revelatory essays from Thomas Keller—“The Lessons of a Dishwasher,” “Inspiration Versus Influence,” “Patience and Persistence”—The French Laundry, Per Se will change how young chefs, determined home cooks, and dedicated food lovers understand and approach their cooking.

Book excerpt: Arthur Edelstein knew how to teach the craft of fiction writing. He did it with intelligence, grace, humor, and authority. His knowledge of literature was vast, his understanding of the human condition profound, and his method of teaching unforgettable. Although many of his students went on to publish and receive recognition for their work, every person who studied with him was the better for it. This anthology is a compendium of all we learned from him and all we know and strive for as writers a tangible token of our admiration.

Book excerpt: DIVIACP Award Winner 2019 marks the twenty-fifth anniversary of the acclaimed French Laundry restaurant in the Napa Valley—“the most exciting place to eat in the United States” (The New York Times). The most transformative cookbook of the century celebrates this milestone by showcasing the genius of chef/proprietor Thomas Keller himself. Keller is a wizard, a purist, a man obsessed with getting it right. And this, his first cookbook, is every bit as satisfying as a French Laundry meal itself: a series of small, impeccable, highly refined, intensely focused courses. Most dazzling is how simple Keller's methods are: squeegeeing the moisture from the skin on fish so it sautées beautifully; poaching eggs in a deep pot of water for perfect shape; the initial steeping in the shell that makes cooking raw lobster out of the shell a cinch; using vinegar as a flavor enhancer; the repeated washing of bones for stock for the cleanest, clearest tastes. From innovative soup techniques, to the proper way to cook green vegetables, to secrets of great fish cookery, to the creation of breathtaking desserts; from beurre monté to foie gras au torchon, to a wild and thoroughly unexpected take on coffee and doughnuts, The French Laundry Cookbook captures, through recipes, essays, profiles, and extraordinary photography, one of America's great restaurants, its great chef, and the food that makes both unique. One hundred and fifty superlative recipes are exact recipes from the French Laundry kitchen—no shortcuts have been taken, no critical steps ignored, all have been thoroughly tested in home kitchens. If you can't get to the French Laundry, you can now re-create at home the very experience Wine Spectator described as “as close to dining perfection as it gets.”
Download or read book Service Included written by Phoebe Damrosch and published by Harper Collins. This book was released on 2009-10-13 with total page 244 pages. Available in PDF, EPUB and Kindle. Book excerpt: A head server at a renowned NYC restaurant dishes out stories and trade secrets from the world of fine dining in this behind-the-scenes memoir. While recent college grad Phoebe Damrosch was figuring out what to do with her life, she supported herself by working as a waiter. Before long she was a captain at the legendary four-star restaurant Per Se, the culinary creation of master chef Thomas Keller. Service Included is the story of her experiences there: her obsession with food, her love affair with a sommelier, and her observations of the highly competitive and frenetic world of fine dining. Along the way, she provides insider dining tips, such as: Never ask your waiter what else he or she does. Never send something back after eating most of it. Never make gagging noises when hearing the specials—someone else at the table might like to order one.

Download or read book Thinking and Perceiving written by Dustin Stokes and published by Routledge. This book was released on 2021-05-26 with total page 279 pages. Available in PDF, EPUB and Kindle. Book excerpt: Human beings are in contact with the world through their minds. One can make sensory perceptual contact with the world: One sees the tree and hears its leaves flutter. And one makes cognitive contact with the world: One forms beliefs about the tree, memories of how it was in the past, and expectations of how it will be in the future. Can the first, perception, be influenced in important ways by the second, cognition? Do cognitive states such as memories, beliefs, and expectations affect what one perceives through the senses? And what is the importance of these possible relations to how we theorize and understand the human mind? Possible cognitive influence on perception (sometimes called "cognitive penetration of perception") has been long debated in philosophy of mind and cognitive science: Some argue that such influence occurs, while others argue that it does not or cannot. In this excellent introduction and overview of the problem, Dustin Stokes examines the following: The philosophical and scientific background to cognition and perception Contemporary ways of distinguishing cognition and perception Questions about the representational content of perception versus cognition Distinct theories of mental architecture: modularity versus malleability Consequences for epistemology, philosophy of science, and aesthetics Philosophical and scientific research on perceptual attention Perceptual skill, learning, and expertise Perceptual content, objectivity, and cultural bias. Additional features, such as chapter summaries, suggestions for further reading, and a glossary, make Thinking and Perceiving an ideal resource for students of philosophy of mind and psychology, cognitive psychology, and cognitive science.

Download or read book One and Many in Aristotle s Metaphysics written by Edward C. Halper and published by Parmenides Publishing. This book was released on 2005-01-12 with total page 401 pages. Available in PDF, EPUB and Kindle. Book excerpt: The problem of the one and the many is central to ancient Greek philosophy, but surprisingly little attention has been paid to Aristotle's treatment of it in the Metaphysics. This omission is all the more surprising because the Metaphysics is one of our principal sources for thinking that the problem is central and for the views of other ancient philosophers on it.The Central Books of the Metaphysics are widely recognized as the most difficult portion of a most difficult work. Halper uses the problem of the one and the many as a lens through which to examine the Central Books. What he sees is an extraordinary degree of doctrinal cogency and argumentative coherence in a work that almost everyone else supposes to be some sort of patchwork. Rather than trying to elucidate Aristotle's doctrines-most of which have little explicitly to do with the problem, Halper holds that the problem of the one and the many, in various formulations, is the key problematic from which Aristotle begins and with which he constructs his arguments. Thus, exploring the problem of the one and the many turns out to be a way to reconstruct Aristotle's arguments in the Metaphysics. Armed with the arguments, Halper is able to see Aristotle's characteristic doctrines as conclusions. These latter are, for the most part, supported by showing that they resolve otherwise insoluble problems. Moreover, having Aristotle's arguments enables Halper to delimit those doctrines and to resolve the apparent contradiction in Aristotle's account of primary ousia, the classic problem of the Central Books. Although there is no way to make the Metaphysics easy, this very thorough treatment of the text succeeds in making it surprisingly intelligible.
