Available in PDF, EPUB and Kindle. Book excerpt: I believe this journey began for me in October of 2003. My wife Nancy and I were in Las Vegas for a Fleetwood Mac concert. The night of the show we had dinner at FiAMMA TRATTORiA and Bar at the MGM Grand. I had the greatest braised short rib ravioli with a beef demi glace. The meal was fabulous and the concert was the best I have ever seen. I told Nancy the next day that I have to figure out how to make that ravioli. Upon return I called my then brother-in-law and still good friend Scott. Scott is a well-traveled chef and restaurateur. I told him I had this ravioli in Las Vegas and I wanted to recreate it. I explained to him what it was all about and he said as creative chef minds do, should be no problem. He gave me a list of things to pick up and said I'll be over Saturday and we'll make it. Saturday came and Scott was instructing and walking me through the process of building this wonderful ravioli. After about 4 hours and a trashed kitchen we all sat down to try this dish. It was like I was back in Las Vegas. We nailed it. I say we because I was there, not because I masterminded the creation. That is when it hit me. I have got to try this again. Scott got my creative juices flowing and I wanted another challenge. I messed around more and more in the kitchen and really started to enjoy cooking. I have been greatly inspired by many different chefs and many different restaurants that are famous and not so famous but with great ideas and techniques. So here I am almost 10 years later fortunate enough to travel to many places around the world with great friends enjoying a lot of great food. I want to share the experiences and especially the food with any one who will listen. Who is The Half Assed Chef? It is anyone who likes to do something nice for friends and family. What better way than to cook for them. For me I enjoy cooking and really don't consider myself a quote unquote chef and The Half Assed Chef is a neat way to say that. On the contrary my Dad Sonny always said “When your going to do any thing in life don't do it half assed.” So I try to live up to that statement and give my best effort in all I do and still not take myself too seriously.Thank you for taking the time to read this and I hope you enjoy the book,

Second hoop: they both need to learn how to cook a series of elaborate, world-renowned family recipes to prove that Jean-Pierre is a worthy heir. Book Everything in Its Place

Book excerpt: An organizational book inspired by the culinary world: how to take the principles of mise-en-place out of your kitchen and into your life. Every day, chefs across the globe churn out enormous amounts of high-quality work with efficiency using a system called mise-en-place—a French culinary term that means “putting in place” and signifies an entire lifestyle of readiness and engagement. In Everything in Its Place, Dan Charnas reveals how to apply mise-en-place outside the kitchen, in any kind of work. Culled from dozens of interviews with culinary professionals and executives, including world-renowned chefs like Thomas Keller and Alfred Portale, this essential guide offers a simple system to focus your actions and accomplish your work. Charnas spells out the 10 major principles of mise-en-place for chefs and non-chefs alike: (1) planning is prime; (2) arranging spaces and perfecting movements; (3) cleaning as you go; (4) making first moves; (5) finishing actions; (6) slowing down to speed up; (7) call and callback; (8) open ears and eyes; (9) inspect and correct; (10) total utilization. This journey into the world of chefs and cooks shows you how each principle works in the kitchen, office, home, and virtually any other setting.

Download or read book Second Line written by Poppy Z. Brite and published by Small Beer Press. This book was released on 2009-10-01 with total page 276 pages. Available in PDF, EPUB and Kindle. Book excerpt: hese two short novels bookend Poppy Z. Brite’s cheerfully chaotic series starring two chefs in New Orleans. The Value of X introduces G-man and Rickey, who grew up in New Orleans’ Lower Ninth Ward and who are slowly realizing there are only two important things in life: cooking and each other. Rickey’s parents aren’t quite so taken with the boy’s plans and get him an impossible-to-resist place at the Culinary Institute of America. In D*U*C*K, Rickey and G-man’s restaurant, Liquor, is doing well but there are the usual complications of running a kitchen: egos get bruised, people get fired . . . and then Rickey is jumped in an alley by one of their ex-waiters. On the mend, Rickey takes a side job to cater the annual Ducks Unlimited banquet, where every course must, of course, include the ducks the hunters have bagged. Rickey’s crew are ready to meet the challenge, but Rickey’s not sure he can do it all and deal with the guest of honor—his childhood hero, former New Orleans Saints quarterback Bobby Hebert. "Fun foodie fiction, and readers will scarf it down as quickly as a plate of blackened crawfish."—Publishers Weekly Originally published in limited hardcover editions, these two novels are full of the pure joy of love, hard work, and great food and are a tremendous extension (or introduction) to Brite’s series. Praise fo the Rickey and G-man stories: “A high-end restaurant is...a gift that keeps on giving. The heat, the bickerings and intrigue, the pursuit of perfection, the dodgy money keeping it all afloate: the setting spawns plots...Can the [Liquor] franchise sustain itself? The answer is yes.”—New York Times “World-class satire and perfect New Orleans lit.”—Andrei Codrescu “Steeped in spicy dialogue and [New Orleans] flavor...a behind-the-swinging-door peek into the world of chefs.”—Entertainment Weekly Poppy Z. Brite’s fiction set in the New Orleans restaurant world includes Prime, Liquor, and Soul Kitchen. She has also published five other novels and three short story collections. She lives with her husband Chris, a chef, in New Orleans.
