Book excerpt: Excerpt from Maple-Sap Sirup: Its Manufacture, Composition, and Effect of Environment Thereon The tree is tapped generally by boring a clean-cut hole from three eighths to half an inch in diameter and about 1 to 3 inches deep, according to the size of the tree. After cleaning the hole, a suitable spile or metal spout is driven in tightly so as to prevent leaking and a bucket is attached to catch the sap. The tapping is done just before the approach of spring so as to obtain the earliest run of sap. The side of the tree to be tapped, the height of the hole above the ground, and the number of holes to a tree are points that have been much discussed. Jones, Edson, and Morse have studied these ques tions thoroughly as well as the subject of maple-sap flow and have published their results in Bulletin 103 of the Vermont Agricultural Experiment Station. A discussion of the care of a maple grove by Fox and Hubbard is given in Bulletin 59 of the Bureau of Forestry, Depart ment of Agriculture. This is because of the difficulty of taking down, cleaning, and reinstalling large rolls of tubing. A 50-tap roll is about as large a roll as an operator would want to handle. This should not be a limiting factor for operations where the tubing is left hanging; in these, the operator should use the full carry ing capacity of the -inch tubing on steeper slopes. Leaks in lateral lines cause the loss of both natural and artificial vacuum and result in low sap yields. Most leaks are caused by failure to push the tubing over the collar of the fitting and can be corrected easily (fig. The densities of sap and sirup. Which vary with the amounts of dissolved solids, are usually expressed in terms of degrees Brix (percent sugar). The density of all maple sirups must be maintained within very narrow limits. Corresponding to a range of only l.5° Brix Brix). If the density is below Brix. It will not meet minimum State and Federal standards. It will taste watery (having a viscosity of less than 164 centipoises at 68° and it will be more conducive to microbial growth. Since sap is becoming a marketable commodity whose value is based upon its sugar content. The precise measurement of its true sugar content in degrees Brix becomes essential.
