Book Breeding for Enhanced Nutrition and Bio Active Compounds in Food Legumes

Download or read book Breeding for Enhanced Nutrition and Bio Active Compounds in Food Legumes written by Debjyoti Sen Gupta and published by Springer Nature. This book was released on 2021-01-18 with total page 269 pages. Available in PDF, EPUB and Kindle. Book excerpt: More than 20 million childhood deaths occur every year due to the micronutrient deficiency and diet-related non-communicable diseases (cardiovascular diseases, cancers, chronic respiratory diseases and diabetes). The United Nations (UN) recently announced that the increase in chronic, non-communicable diseases has resulted in 36 million deaths around the world annually, claiming more lives than all other causes combined. These chronic diseases are not isolated to developed countries and are even more pronounced in the developing world. Such chronic illnesses have caused far more deaths than infectious diseases throughout the world (except Africa) in recent years. Therefore, enrichment of micronutrients in staple food crops is of paramount importance for the nutritional security in our world. Biofortification is the development of micronutrient- and/or vitamin-rich crops using traditional crop improvement practices as well as modern biotechnology tools. It is a more sustainable and cost effective method than food supplementation, fortification and diet diversification. This work consolidates available information on the different aspects of breeding for improved nutrition of pulses. An overview of entire pulses based on their nutritional profile is given so that audience can find the desired information easily. Food legumes are the active ingredients in many gluten-free food products and there is a continuous rise of the use of pulses flour in milling and baking processes. Our book sheds light on recent efforts and the underlying constraints of meeting the public demand. We believe this work provides the basic information for anyone interested in biofortification and stimulate further research to meet this unique challenge.

Book excerpt: Sprouting Deliciousness: 105 Ways to Enjoy Brussels Sprouts Brussels sprouts have long been a staple vegetable in many households, but they haven't always gotten the love they deserve. All too often, these tiny cabbages are boiled until they're mushy and flavorless, leaving people with a negative impression of what could be an incredibly delicious and versatile vegetable. That's where Sprouting Deliciousness: 105 Ways to Enjoy Brussels Sprouts comes in. This cookbook is your guide to exploring the many different ways you can enjoy Brussels sprouts, from roasting and frying to shredding and sautéing. But why focus specifically on Brussels sprouts? For starters, they're incredibly nutrient-dense. Just one cup of cooked Brussels sprouts contains more than 100% of your daily recommended intake of vitamin C, making them a great way to support your immune system. They're also a good source of fiber, vitamin K, and folate. But beyond their nutritional value, Brussels sprouts also have a unique flavor that can be both sweet and bitter at the same time. When prepared correctly, they can be tender and delicious, with a depth of flavor that's both satisfying and unexpected. In Sprouting Deliciousness, you'll learn how to prepare Brussels sprouts in a variety of different ways, each highlighting their unique flavor and texture. Try them roasted with garlic and Parmesan, glazed with maple and bourbon, or even raw and shredded in a salad. You can also explore less traditional preparations, like Brussels sprout fried rice, pizza with Brussels sprout leaves, or even Brussels sprout tacos. But this cookbook is about more than just recipes. Throughout the pages, you'll find tips for buying, storing, and preparing Brussels sprouts, as well as information on their nutritional benefits. With the proliferation of artificial additives, hormones, antibiotics, and the thousand other man-made substances and chemical cocktails lurking in our grocery bags, eating healthy, natural foods is trickier than ever. It's no coincidence that America's health is flagging, with obesity and type 2 diabetes now at epidemic levels. Taking control of your diet doesn't have to be a challenge. Kurt Beecher Dammeier, chef, restaurateur, food entrepreneur, retailer, and educator has spent the past 30 years of his life working to rid his own diet of food additives, and nearly 20 creating and selling pure, unadulterated foods through his Seattle-based family of food businesses (including Beecher's Handmade Cheese, Pasta & Co, and Bennett's Restaurant). In Pure Food, Kurt shares his own story, as well as providing a roadmap for readers to forge a diet based on pure, additive-free foods. Part handbook and part cookbook, Pure Food contains more than 70 delicious and natural recipes for pure living. Make Braised Beef Chuck Roast for Sunday supper, followed up by Monday night Beef Chili, and Beef and Mushroom Lasagna to use up the leftover roast on Tuesday. It also contains an assortment of sauces and sides, from Red Fresno Sriracha and 4 Year Flagship Aioli to Red Cabbage Peperonata and Wilted Collard Greens. And leave room for dessert, like Apple Pear Crisp and Beecher's No-Bake Super-Light Cheese Cake.
