Many developing countries such as Tanzania experience post-harvest losses of 40%, and there is little ability to preserve and store foods for off-season consumption due to expensive or unreliable energy and a lack of access to refrigeration. Alternatively, fruits and vegetables can be dehydrated using solar crop dryers. Because many developing countries are in tropical regions, properly dehydrating fruits and vegetables to moisture levels appropriate for storage and off-season consumption can be difficult. In an attempt to overcome the challenges of the high humidity, intermittent clouds, and haze often present in tropical climates, this project investigates the effectiveness of adding a concave solar concentrator built from low-cost, locally available materials to a typical Tanzanian solar crop dryer. Two identical solar crop dryers were constructed, with one serving as the control and the other for testing the solar concentrator. Drying trials using Roma tomatoes with initial moisture content of approximately 90% were conducted in Davis, California (38° 32' 42" N / 121° 44' 21" W) in various climatic conditions throughout the summer and fall. Tomatoes were considered dried at 10% moisture content. Temperature, relative humidity, and solar radiation were measured outside as well as within each of the dryers to determine how the addition of a solar concentrator can affect the drying rate of tomatoes in solar crop dryers. The concentrator proved to be effective, reducing drying time by 21% in addition to increasing internal dryer temperature and reducing relative humidity. An additional study on the quality of the fresh and dried tomatoes found that the pH, titratable acidity, color, Brix, lycopene, and vitamin C determined there was no significant difference in quality between tomatoes dried with or without the concentrator.

During the project, extension workers from four developing Arab countries were trained in techniques of sun and solar drying. The manual provides clear and detailed information on the basic theory and practice of sun and solar drying of various food products (fish, fruit, vegetables and grains). It discusses the type of information needed to determine whether solar drying is feasible and appropriate in particular cases, and, with an explanation of how the sun's energy can be harnessed, outlines basic drying theory. Several different types of dryers - cabinet, tent, paddy, hybrid - are described and some guidance is given on their construction. Information is also provided on the preparation of the raw materials before they are dried and on packaging techniques for the dried product. It is hoped that agronomists, technologists and rural development trainers will use the information to encourage farmers and rural artisans to adopt these food-processing techniques.

Book excerpt: Solar drying can reduce fruit and vegetable losses and increase availability for farmers who produce surplus but lack storage. While traditional sun drying in Nepal uses bamboo (e.g. supo), improved solar dryers like the chimney dryer are more efficient and hygienic. This project assessed if the chimney dryer is an appropriate and beneficial technology for reducing food loss to disseminate to farmers, especially women, in Dadeldhura district, Nepal. In this study, appropriate was defined as relevant, affordable, locally available, and user-friendly, while benefits were assessed in terms of food availability, quality and safety; time and labor; and income. Using a convergent mixed methods approach, I constructed three chimney dryers, conducted focus group discussions, key informant interviews, and workshops; made observations in the community; and carried out two experiments to quantitatively compare different drying methods. Qualitative data collection around social impact was guided by the Integrating Gender and Nutrition within Agricultural Extension Services (INGENAES) Gender Technology Assessment. I found that the chimney dryer was faster, more protected and hygienic, and preserved quality better than sun drying. While the dryer is relatively easy to use, it may require skilled labor to construct, and the design and size can be adapted based on user preference. Although local materials are affordable, any cost may discourage farmer adoption; so, in the future, the technology can be made more affordable through multiple households pooling their resources and sharing a dryer, or through government subsidies. Because drying is a relatively passive activity with little active time or labor, food safety and nutrition advantages may actually be more important than time saved. However, faster drying is still important for reduced spoilage, which can ultimately save labor and increase food safety and availability. Women will likely gain more than men from reduced time and workload, though concerted efforts will be required to ensure gender equity in value chain development for dried foods. Moreover, because farmers already know how to dry, the entire "dry chain," including the DryCardTM to measure dryness and moisture-proof storage, should be promoted to prevent spoilage and mycotoxin development.

In particular, newly accessible data enabled the revision of the entire series of undernourishment estimates for China back to 2000, resulting in a substantial downward shift of the series of the number of undernourished in the world. Nevertheless, the revision confirms the trend reported in past editions: the number of people affected by hunger globally has been slowly on the rise since 2014. The report also shows that the burden of malnutrition in all its forms continues to be a challenge. There has been some progress for child stunting, low birthweight and exclusive breastfeeding, but at a pace that is still too slow. Childhood overweight is not improving and adult obesity is on the rise in all regions. The report complements the usual assessment of food security and nutrition with projections of what the world may look like in 2030, if trends of the last decade continue. Projections show that the world is not on track to achieve Zero Hunger by 2030 and, despite some progress, most indicators are also not on track to meet global nutrition targets. The food security and nutritional status of the most vulnerable population groups is likely to deteriorate further due to the health and socio economic impacts of the COVID-19 pandemic. The report puts a spotlight on diet quality as a critical link between food security and nutrition. Meeting SDG 2 targets will only be possible if people have enough food to eat and if what they are eating is nutritious and affordable. The report also introduces new analysis of the cost and affordability of healthy diets around the world, by region and in different development contexts. It presents valuations of the health and climate-change costs associated with current food consumption patterns, as well as the potential cost savings if food consumption patterns were to shift towards healthy diets that include sustainability considerations. The report then concludes with a discussion of the policies and strategies to transform food systems to ensure affordable healthy diets, as part of the required efforts to end both hunger and all forms of malnutrition.

While energy has a key enabling role in food system transformation and innovation in agriculture, its current use is unsustainable because of the high dependence on fossil fuels and frequent access to energy in developing countries. The challenge is to disconnect fossil fuel use from food system transformation without hampering food security. The use of renewable energy in food systems offers vast opportunities to address this challenge and help food systems meet their energy needs while advancing rural development while contributing to rural development and climate action.
