This essen tial and most expensive of plant foods is taken in by the roots of plants. Small quantities of nitrogen exist in soils in a form known as nitrates, which dissolve readily in water and enter the plant through its roots7 in company with the other plant foods. The roots of leguminous plants such as clovers, alfalfa, peas, and beans, are able also, with the aid of minute organisms known as bacteria, to use the uncombined nitrogen in the soil air. The latter volume is divided into two parts: Part I dealing with such exercises in Pure Organic Chemistry as are essential for agricultural students, and is entirely qualitative, while Part II deals with quantitative estimations and technical analyses of food stuffs. This division has been considered desirable, as students who have already taken a course in Organic Chemistry will find it unnecessary to work through Part I of Volume II. Volume III deals with the special advanced Chemistry of Insecticides and Fungicides, Food preservatives, etc. It is hoped that this division into convenient booklets will make them useful to teachers. The exercises are designed to illustrate most of the essential points in Agricultural Chemistry and to require the minimum of apparatus. A Course of Practical Work was compiled by Professor T. B. Wood some years ago for the use of his classes, and this forms the foundation of a portion of the present exercises. Chemistry aids agriculture in many ways. By means of it, exact data are collected and the fundamental reasons for practical results are explained. Then, too, chemistry invents new or improves old methods of fertilization. The chemist analyzes soils, manures and vegetable products. The value of soil analysis to the practical farmer, perhaps formerly overrated, in more recent years has been under rated. From a soil analysis the farmer can at least learn if his soil is unusually deficient in any important element. Chemistry also protects the agriculturist from the impositions of the unscrupulous fertilizer manufacturer.
