It is quite evident, therefore, that curing is a life process and thus differs fundamentally from the subsequent fermentation, which takes place after the death Of the leaf cells. That curing is essentially a life process can also be readily shown by chemical analysis, as is brought out in later paragraphs. The two processes may or may not go hand in hand, depending on whether the existing conditions favor both processes. In practice the problem is to dry the leaf under such conditions as will best develop the de sirable qualities of cured tobacco. It is to be remembered that if the living cells of the leaf are killed prematurely the curing is stopped once for all, although the drying may continue. Under ordinary conditions the leaf is killed by the loss of water, so it is essential that too rapid drying be avoided in order to afford an Opportunity for the curing changes to take place. On the other hand, if the drying is too slow or is delayed too long the curing proceeds too far. The rate of drying is therefore one of the principal factors in good curing. Volume 83 reported on the carcinogenicity of tobacco smoke and involuntary smoking (second-hand smoke or environmental tobacco smoke) (IARC 2004a). Volume 85 summarized the evidence on the carcinogenic risk of chewing betel quid with and without tobacco (IARC 2004b). That volume explored the variety of products chewed in South Asia and other parts of the word that contain areca nut in combination with other ingredients, often including tobacco. In this eighty-ninth volume, the carcinogenic risks associated with the use of smokeless tobacco, including chewing tobacco and snuff, are considered in a first monograph. The second monograph reviews some tobacco-specific nitrosamines. Despite extensive knowledge about successful interventions, however, approximately one-quarter of American adults still smoke. Tobacco-related illnesses and death place a huge burden on our society. Ending the Tobacco Problem generates a blueprint for the nation in the struggle to reduce tobacco use. The report reviews effective prevention and treatment interventions and considers a set of new tobacco control policies for adoption by federal and state governments. Carefully constructed with two distinct parts, the book first provides background information on the history and nature of tobacco use, developing the context for the policy blueprint proposed in the second half of the report. The report documents the extraordinary growth of tobacco use during the first half of the 20th century as well as its subsequent reversal in the mid-1960s (in the wake of findings from the Surgeon General). It also reviews the addictive properties of nicotine, delving into the factors that make it so difficult for people to quit and examines recent trends in tobacco use.
