The two volumes represented here are the result of an International Congress Of Mucosal Immunology held at the Niagara Falls Convention Center and the Niagara Falls Hilton on June 29 - July 3, 1986. This satellite meeting of the International Congress of Immunology placed emphasis on all aspects of the Mucosal Immune System. This included the regulation of differentiation of mucosal lymphocytes, mucosa-associated lymphoreticular tissue and lymphocyte homing, the immunology of mucosa associated tissues and glands, effector functions in mucosal immunity, and the effects of environmental antigens on the immune response, all of which are included in Volume I. The second volume has emphasized studies of the immune response and effector functions, IgA biosynthesis and transport, IgA proteases and effector functions, developmental aspects and immunodeficiency, the immunopathology of IgA and mucosal immunoprophylaxis. A total of 218 papers are included in these two volumes and a comparison to past meetings held at four to five year intervals indicates the explosive growth of mucosal immunology.

A total of 50 papers were presented at the 1973 meeting and 81 reports were given at the 1977 meeting, both of which were held in Birmingham, Alabama and were published in the current series by Plenum Press. The third meeting in this series, held in 1982 in New York City contained 113 contributions. Clearly, the Mucosal Immune System has come of age. The hosting of a Congress of this magnitude and the compilation of two Volumes of publications obviously necessitates our sincere thanks for the efforts of many individuals and groups. The secretarial staffs of the Editors of these Volumes are gratefully acknowledged. These volumes would not have been possible without the expert skill and dedication of Ms. Yvonne A. Noll, who corrected and retyped all papers in this series.

The First International Symposium on Continuous Transcutaneous Blood Gas Monitoring took place in Marburg, West Germany, from May 31 to June 2, 1978. This was the first major international meeting exclusively devoted to transcutaneous blood gas monitoring, and it was attended by the scientists who had developed this technique or had been \'Jorking with it, by a large number of doctors, mainly neonatologists who had just begun to use the technique or hoped to do so, and, finally, a rather large number of representatives of industry. The second symposium, with the same title, was held in Zurich, Switzerland, October 14-16, 1981. This time the focus was, to a large extent, on transcutaneous PC0 monitori ng, for whi ch equipment had become 2 commercially available only a short time before. Fetal monitoring was also discussed at length, as was the use of the transcutaneous techniques in other fields, such as vascular surgery and experimental animal research. Its members span virtually all disciplines, ex tending from various branches of clinical medicine such as anesthesiology, ophthalmology and surgery through the basic medical sciences of physiology and biochemistry to the physical sciences and engineering. The fifteenth annual meeting of ISOTT was held in 1987 for three days, from July 22 to 24, at Hokkaido University in Sapporo, Japan. Previously, all ISOTT meetings had been held in Europe or the USA alternatively. This time, however, the meeting was held for the first time in an Asian country. When we first started preparing for this meeting some of our members were afraid that the number of those attending would not exceed '30. Fortunately the results were quite different. We had more than 60 participants from abroad and an even greater number from Japan. In addition to three special lectures and two symposia there were a total of 88 posters presented over the three days of the meeting. These covered all aspects of physiological oxygen transport including convection, diffusion, chemical reaction, and control of oxygen demand in blood and various tissues as well as the methods, models and instrumentation for their study. The 92 papers which comprise this volume encompass all of these areas.

In assembling a distinguished group of participants for the symposium, "Chemistry of the Structure/Function Relationships in Cheese," we hoped to review the interplay of these trends and forecast the direction of future research. Contributors evaluated the current status of cheesemaking and highlighted the information that will be essential for new developments. They also focused the attention of agricultural and food chemists on the opportunities in cheese research and the potential contributions they might make to the future of cheese, a most valuable food product. Nevertheless, I shall do my best to give a historical perspeotive of the subjects of the meeting which I consider to be very important for the frontiers of researoh on taurine. ~he following topios have also beoome coherent areas of study during the development of researoh on taurine: metabolism, nutrition, neurochemistry, cardiovasoular regulation. Although taurine was isolated in 1821 by ~iedman and Gmel1n, its only biochemioal role known at the time was the synthesis of bile saIte in mammalian tissue. There has been an inoreasing interest in the biologioal action of taurine from metabolio aspects to other biologioal aspects (nutrition, development, eto.). In 1975 it was first demonstrated that taurine deprivation produoed retinal degeneration in cats; more reoent studies showed that a taurine-free diet or the administration of taurine transport inhibitors caused retinal degeneration in other mammlas.
