Available in PDF, EPUB and Kindle. Book excerpt: Excerpt from Testing Milk and Its Products: A Manual for Dairy Students, Creamery and Cheese-Factory Factory Operators and Dairy Farmers The need of arapid, accurate and inexpensive method of determining the amount of butter fat in milk and other dairy products became more and more apparent, in this country and abroad, with the progress of the dairy industry, and especially with the growth of the factory system of butter and cheese making during the last few decades. SO long as each farmer made his'own butter and sold it to private customers or at the village grocery, it was not a matter of much importance to others whether the milk produced by his cows was rich or poor. But as creameries and cheese factories mul tiplied, and farmers in the dairy sections of our coun try became to a large extent patrons of one or the other of these, a system of equitable payment for the milk or cream delivered became a vital question. Available in PDF, EPUB and Kindle. Book excerpt: Excerpt from Testing Milk and Cream Sampling is the first important step in any test: an inaccurate sample Will of course give incorrect results regardless of the accuracy of the test ing. The experience and skill of the operator cannot offset inaccurate sampling. The most satisfactory method of mixing milk for sampling is to pour it from one container to another. If the cream has risen one must repeat the pouring three or four times and perhaps warm the milk slightly in order to soften the lumps of cream and to distribute the fat uniformly throughout the milk. In cow-testing work the complete milk; ing is poured from one pail to another as soon as it is drawn, and the sample taken at once. The sample must be taken Immediately after mix ing, because the fat soon begins to rise. Milk stirrers or mechanical agitators should be used if the milk cannot be poured from one container to another. Great care is needed to insure thorough mixing immediately before the sample is taken. This book was released on 2018-10-08 with total page 20 pages. Available in PDF, EPUB and Kindle. Book excerpt: Excerpt from Investigations of "Milk Tests" The cost of keeping a cow is an item not at all considered here, as each individual owner is the one best supplied with facts and figures from which to make that calculation for his own locality. The following table gives a record of the cows tested. It shows a striking variation, and how owners of cows could calculate the profit and loss per cow, if, in addition to the per cent. Of fat, they knew the pounds of milk produced by each cow during the year. Although somewhat limited, this is given as a beginning of work to be more extensively followed up, in the hope that such an illustration may suggest to those interested a way of becoming so acquainted with their cows and business that the cause of success or failure can be better understood each year.
