Book excerpt: Canarium ovatum Engl., known as pili, is one of the most prized nut-producing endemic trees in the Philippines. It has gained popularity in the market industry due to a variety of products made from its fruits. However, the fruit’s skin (exocarp) which turns from green to dark purple when fully ripe is often discarded as waste. Owing to the many functional properties of natural pigments, this research study focused on the functional properties of the dark pigmented exocarp extract and its possible application as natural food colorant in yogurt. Thin layer chromatography of the ethanolic extract revealed the presence of flavonoids and phenolic compounds. The pili exocarp extract had high total phenolic content (8.8 mg ascorbic acid equivalent/g dry weight of sample), total flavonoid content (2.2mg catechin equivalent/g DW of sample), and anthocyanin content (17.5 mg CE/g DW of sample). The pigment extract also exhibited 82.1% radical-scavenging activities (RSA) at 1.0 mg/ml concentration with EC50 value of 0.0071 mg/ml and FRAP value of 32.0 mmolFeSO4/gDW. The presence of these phytochemicals showed the potential antioxidant activity of the pili pigment. The pigment extract did not show any inhibitory activity against Escherichia coli, and thus, indicated a lesser toxicity against gut normal bacterial flora, but failed to exhibit cytotoxic activity against HCT116 colon cancer cell line. Stability tests showed decreased in redness with increasing temperature or pH. There is a slight difference in over-all acceptability between natural and synthetic-colored yogurt. Thus, Pili exocarp extract can be used as a functional food colorant in yogurt.
