EXCERPT FROM THE BOOK The second principle of the Ornish diet involves a dramatic reduction of sugar consumption. Instead, complex carbohydrates contained in whole-grain foods, cereals, rice, soy, beans and starchy fruits and vegetables are preferred. Complex carbohydrates end up being broken down to simple sugar molecules; however, unlike simple sugar, this is a gradual, slow process. In other words, complex carbohydrates are excellent sources of slow-release sugar, which prevents a sharp elevation of blood sugar levels. The Ornish diet involves strictly reducing the intake of simple sugar, which is found in processed sugar, honey, candies, sweets and sweetened bakery products. However, unlike animal fat, sugar consumption is allowed in small amounts; dieters are permitted two servings per day, which is about two tablespoons of sugar. According to a 2007 research study conducted by medical experts at the Department of Nutrition, Harvard School of Public Health, Boston, and published in the European Journal of Clinical Nutrition, the healthiest sources of carbohydrates in terms of preventing obesity are whole-grain foods, cereals, legumes, vegetables and fruits.
