Book excerpt: España produce cada año más de 1,8 millones de hectolitros de vinos espumosos, que originan como desecho unas 200 toneladas de residuos de levadura de segunda fermentación al año, denominadas "lías de segunda fermentación" (reglamento EEC no 337/79). El destino habitual de este subproducto es la desalcoholización mediante la destilación para su empleo en alimentación animal, con poco valor añadido, o su destrucción, lo que supone un gasto para la bodega. Hasta ahora el estudio de la composición y posibles aprovechamientos de los subproductos de la industria vitivinícola se ha centrado en los residuos sólidos provenientes de la uva, como hollejos y pepitas. No hay datos acerca de la composición y potenciales usos que pueden ofrecer la lía de segunda fermentación de vinos espumosos. El objetivo del presente trabajo es caracterizar las lías de segunda fermentación y evaluar su rol en la crianza de los vinos espumosos. Para alcanzar este objetivo, se han comparado las evoluciones de la composición y la capacidad antioxidante a lo largo del envejecimiento de vinos espumosos en contacto con lías, con vinos que envejecen sin la presencia de las mismas, y se han caracterizado lías recuperadas de vinos espumosos cava y Charmat con técnicas de biología (microscopía confocal y citometría de flujo) y analíticas (composición y actividad antioxidante). Los resultados muestran que las lías ejercen una modulación en la actividad antioxidante de los vinos espumosos, manteniéndola constante cuando están en contacto con el vino. Por microscopía confocal se ha visto que las lías mantienen la estructura ovoide típica de Saccharomyces cerevisiae y la integridad de la pared después del envejecimiento en el vino espumoso. La población celular de las lías de Charmat es más numerosa y contiene menos restos celulares que la población de lías de cava. Ambas poblaciones están constituidas básicamente por células no viables; 98 % en el caso de lía de Charmat y 90 % para lía de cava. Finalmente, de los análisis de composición y actividad antioxidante se puede deducir que la capacidad antioxidante de las lías reside en la pared. La importante actividad antioxidante mostrada por ésta no se debe a su contenido en tioles, como otros sucede en otros homogenados celulares, ni a los glucanos de la pared, sino a su contenido en manoproteínas.
