Book excerpt: The Opuntia fruits, commonly known as cactus pears or prickly pears, have been suggested by the Food and Agriculture Organization to be a promising and strategic crop in regions suffering from lack of water. In Mexico, India, South Africa, and the Mediterranean, the Opuntia fruits have become popular due to their nutritive value and health-promoting benefits, including antioxidant, antiulcerogenic and antiatherogenic traits and protective effects against LDL oxidation. Additionally, readily absorbable sugars, high vitamin C and mineral content, and a pleasant flavour make Opuntia tailor-made for novel foods. Due to their ecological advantages, high functional value, and health-related traits, Opuntia fruits can be highly exploited in different food processing applications. For instance, Opuntia cactus fruits are used for the preparation of juices and marmalades; Opuntia cactus plants are used to feed animals in African and Latin American countries; Peruvian farmers cultivate Opuntia cactus for growing the cochineal (Dactylopius coccus) insect and producing the natural dye carmine; and the commercial production of food and non-food products from Opuntia has been established in Mexico, USA and several Mediterranean countries. Opuntia spp.: Chemistry, Bioactivity and Industrial Applications creates a multidisciplinary forum of discussion on Opuntia cactus with special emphasis on its horticulture, post-harvest, marketability, chemistry, functionality, health-promoting properties, technology and processing. The text includes detailed discussion of the impact of traditional and innovative processing on the recovery of high-added value compounds from Opuntia spp. by-products. Book excerpt: Archaeology seems to have become an active partner in the attempt to prove the historical truth of the Bible. Biblical archaeologists have gone to the field in search of Noah's ark or the walls of Jericho, as if the finding of these artifacts would make the events of scripture somehow more true or real. Thomas Thompson is one of the most vocal contemporary critics of biblical archaeology. His simple but powerful thesis is that archaeology cannot be used in the service of the Bible. Focusing on the patriarchal narratives the stories of Abraham, Isaac, and Jacob he demonstrates that archaeological research simply cannot historically substantiate these stories. Going further, Thompson says that archaeological materials should never be dated or evaluated on the basis of written texts. Looking to the patriarchal narratives in Genesis, he concludes that these stories are neither historical nor were they intended to be historical. Instead, these narratives are written as expressions of Israel's relationship to God. Thomas L. Thompson is Professor of Old Testament, University of Copenhagen. His books include The Mythic Past and The Early History of the Israelite People.

Keller is interested in both how an oppositional “versus” came to be inserted between nature and nurture, and how the distinction on which that opposition depends, the idea that nature and nurture are separable, came to be taken for granted. How, she asks, did the illusion of a space between nature and nurture become entrenched in our thinking, and why is it so tenacious? Keller reveals that the assumption that the influences of nature and nurture can be separated is neither timeless nor universal, but rather a notion that emerged in Anglo-American culture in the late nineteenth century. She shows that the seemingly clear-cut nature-nurture debate is riddled with incoherence. It encompasses many disparate questions knitted together into an indissoluble tangle, and it is marked by a chronic ambiguity in language. There is little consensus about the meanings of terms such as nature, nurture, gene, and environment. Keller suggests that contemporary genetics can provide a more appropriate, precise, and useful vocabulary, one that might help put an end to the confusion surrounding the nature-nurture controversy.
