Book excerpt: Available online: https://pub.norden.org/temanord2021-504/ The background for the project is that EU Commission has introduced new regulations and policies for food waste prevention and monitoring. Sweden and Denmark link their reporting closely to the waste framework directive while Finland and Norway base their most data collection on voluntary reporting. Norway and Finland report on a detailed level and estimate impact like costs and GHG-emissions. All Nordic countries have necessary detail in data that are measured to fulfil the requirements set by the purpose of food waste monitoring program. Halving food waste by 2030 calls for radical changes in the food chain. These radical changes require four dimensions: technology push, societal pull, market pull, and regulatory push. Based on these four dimensions, we have classified measures to reduce food waste into four topics: Policy instruments, changing social norms, nudging and changing practices, and intelligent technology and new products & business models.

Book excerpt: This project has resulted in a suggested definitional and methodological framework for future food waste studies in primary production. It has also resulted in a first attempt to quantify food waste in primary production in the Nordic countries. The project was focused on primary production in the Nordic countries of Denmark, Finland, Norway and Sweden. One purpose has been to test adequate methods for collecting data on food losses and waste from primary producers in the Nordic countries. Another purpose was to estimate the amount of food losses and waste in primary production in the Nordic Countries. In order to collect data and quantify food losses and waste in primary production it was necessary to work on these definitions or possibly introduce new, more useful terms. Thus this project involved defining terms, developing methodologies and quantifying data.

The barriers for unleashing the potential were also studied.Four areas of industry and two cross-cutting drivers were selected for the study. The bioeconomy, the food and beverage sector, building and construction, and the mobility sector play a prominent role in the Nordic economies. They are also responsible for significant emissions and waste. The drivers – applying new circular business models and better exploiting data/digitalisation – can bring change that holds promise for significant benefits.The study’s results are summed up in a set of recommendations addressing how the barriers can be torn down and how positive impacts of circular transition can be supported.

Book excerpt: This report covers and describes all kinds of operations preparing and serving food outside private homes, we call all these operations the "hospitality sector". According to Danish and Finnish statistics it might be concluded that one third of all food is served within the hospitality sector. This means that the hospitality sector is important also when it comes to fighting avoidable food waste in society. Due to the fact that the hospitality sector is complex and comprises various kinds of activities and organisations, the report contains a thorough description of this sector in each of the four Nordic countries Denmark, Finland, Norway, and Sweden. Based on different methods the amounts of food waste and avoidable food waste are calculated in order to illustrate the situation of avoidable food waste within the hospitality sector in general and for different segments. The analyses conclude with a best estimate for total avoidable food waste in the four countries of 456,000 tons, e.g. about 18kg/ inhabitant. The differences between available reports underline a need for better statistics, including better definitions and reporting systems. Prevention of avoidable food waste is an important environmental issue. Each country will be affected of new EU ambitions on avoidable food waste reduction. Further, every member state has to develop waste prevention plans for 2013. New EU strategies on resource efficiency will probably also comprise the issue of avoidable food waste. The report describes initiatives taken both by Governments and operators in the market. Both EU and some countries are also about to define reduction targets on avoidable food waste. Many operators within the hospitality sector are active as well in order to reduce their avoidable food waste, both in order to reduce their costs and reduce the environmental impacts of food that is not eaten by humans. The report concludes that new instruments are needed in order to meet overall avoidable food waste targets, to reduce environmental negative impacts and obtain benefits for society. Instruments are also required in order to bridge the ambitions and rules related to food safety and avoidable food waste prevention. Different economic, regulative and communicative instruments are listed without concluding on which instrument or package of instruments that should be chosen. The demand of and potential for redistribution is probably much higher than at present, and the reports points out strategies and measures for how food banks can contribute to secure and further develop. Representing a substantial proportion of total household waste, food waste carries a raft of economic, environmental and social consequences. Book excerpt: This work presents the findings of an extensive study on the state-of-the-art regarding the problem of food waste in Belarus, Estonia, Germany, Latvia, Lithuania, Poland and Sweden. The results show that the problem of food waste can be found at different levels in each country and that our knowledge of it is limited by the current lack of studies in the area. The problem is primarily due to food waste generated by the manufacturing sector, mostly in the form of unused or inefficiently used by-products, as well as on a share of food thrown away by households that is still suitable for human consumption. The main reduction/prevention method, applied across the countries, is food donation; the remaining methods are the same ones used for biodegradable waste in the respective countries. The findings gathered in this study show a number of potential measures/methods for sustainable food waste management, which may be considered in future works in order to reduce the amounts of food waste generated in each of the aforementioned countries.

Book excerpt: The working group on Sustainable Consumption and Production, under the Nordic Council of Ministers requested consultants from Gaia to identify, write out and publish best practice cases of sustainable consumption and production on the UNEP SCP Clearinghouse. This report presents nineteen initiatives that cover two particular themes: 1) Sustainable Lifestyles and Education and 2) Sustainable Public Procurement. The cases have also been added into the UNEP's 10 Year Frame-work Program (10YFP) information platform, the SCP Clearinghouse which is a concrete result of Rio+20. The objective is to enhance international cooperation in order to accelerate a shift towards sustainable consumption and production in developed and developing countries. The SCP Clearinghouse is a web-based information sharing tool, which can be used by different actors as an inspiration for advancing SCP worldwide.
