Texture characteristics are derived by transmitting ultrasound energy into the material, measuring the time it takes to be received by ultrasound receiving means, and calculating velocity of the ultrasound energy from the timed measurements. Textured characteristics can then be derived from the velocity calculations. One or more sets of ultrasound transmitters and receivers are utilized to derive velocity measurements in different angular orientations through the material and in different ultrasound modes. An ultrasound transmitter is utilized to direct ultrasound energy to the material and one or more ultrasound receivers are utilized to receive the same. The receivers are at a predetermined fixed distance from the transmitter. A control means is utilized to control transmission of the ultrasound, and a processing means derives timing, calculation of velocity and derivation of texture characteristics.

Specifically there is growing interest in the application of nondestructive evaluation (NOEl to the measurement of physical and mechanical properties of materials. The measurement of materials properties is often referred to as materials characterization; thus nondestructive techniques applied to characterization become nondestructive characterization (NDCl. There are a number of meetings, proceedings and journals focused upon nondestructive technologies and the detection and identification of cracks and voids. However, the series of symposia, of which these proceedings represent the fourth, are the only meetings uniquely focused upon nondestructive characterization. Moreover, these symposia are especially concerned with stimulating communication between the materials, mechanical and manufacturing engineer and the NDE technology oriented engineer and scientist. Book excerpt: Even before the publication of Special Technical Publication 433 of the American Society for Testing and Materials, it became obvious that the brief treatment given to the principles and techniques for sensory measurement and analysis of texture in that volume was all too brief; hence, a task force of ASTM Committee E-18 was formed to develop an authoritative and comprehensive volume on this most complex and important subject to provide within one cover for the student, researcher, and the food manufacturer, a definition and an understanding of the subject offood texture, as well as sensory and objective methods for its measurement. This most difficult task appeared to be possible only after the task force had obtained the assistance of special ists in the many disciplines involved, and after deciding to limit the dissertation to the measurement of texture of foods only. The task was further clarified when Dr. Finney proposed an outline of six chapters, beginning with one on definition. The second chapter was to be on principles of sensory evaluations, the third on sensory measurements, the fourth on principles of objective evaluation, the fifth on objective measurements, and the final concluding chapter on subjective-objective analogues. The first drafts of these six chapters constituted a symposium on texture presented before a joint session at the 1971 Annual Meeting of the Institute of Food Technology and the American Society for Testing and Materials.

This method uses frequency domain analysis of the acoustic birefringence by which an ultrasonic shear wave propagating in a material travels at slightly different velocities in the polarizations parallel and perpendicular to the axes of texture or stress. Results obtained from a Ti-6%Al-4%V block confirm that the velocity shift is linearly dependent on the amount of stress, but is independent of frequency in the case of stress as opposed to the texture. Experimental considerations involving transducer characteristics, bond (transducer to specimen) characteristics, specimen size, and signal processing are discussed in relation to the reliability and repeatability of the data.
