For decades France had been free of famine, but the fall grain harvest had been meager, and the government of the newly crowned King Louis XVI had issued an untimely edict allowing the free commerce of grain within the kingdom. Prices skyrocketed, causing riots to break out in April, first in the market town of Beaumont-sur-Oise, then sweeping through the Paris Basin for the next three weeks. Known as the Flour War, or the guerre des farines, these riots are the subject of Cynthia Bouton's fascinating study. Building upon French historian George Rud&é's pioneering work, Bouton identifies communities of participants and victims in the Flour War, analyzing them according to class, occupation, gender, and location. As typically happened, crowds of common people (menu peuple) confronted those who controlled the grain-bakers, merchants, millers, cultivators, and local authorities. Bouton asks why women of the menu peuple were heavily represented in the riots, often assuming crucial roles as instigators and leaders. In most instances, the people did not steal the provisions but forced those they cornered to sell at a price the rioters deemed &"just.&" Bouton examines this phenomenon, known as taxation populaire, and considers the growing &"sophistication of purpose&" of rioters by placing the Flour War within the larger context of food riots in early modern Europe.

The traditional approach is based on the assumption that the goal of any business is to make money. All decisions regarding supply and production should be made to maximize profit. The discrepancy in creating non-economic value is sometimes the result of separating ownership from control over an enterprise. Although shareholders are interested in maximizing profit, management that actually makes decisions can also pursue other goals. In addition to economic aspects, the management intentions of modern managers are also influenced by factors arising from the organizational culture built, co-created within the organization and sometimes with the participation of external actors such as suppliers and customers. The sources of the creation of social values will be the management intentions of top management, often initiated by the adopted values and rules on the basis of which resources are bound within the structure of the business model. The value of sustainability is based on the identification of those creative sources that relate to economic and social value. Economic value is created through social value and vice versa. This allows the complementarity of the value created to be mutually supportive. The business model that integrates both of these values should be more resistant to crises than the one that is oriented only toward producing economic value. Concurrent implementation of economic and social goals increases resilience and affects the success of modern business models. This is due to the specificity of the business ecosystem that is built as part of the business model, which, in essence, is based on the use of social factors to merge the business model into a complex ecosystem capable of producing value.

The `bread-making quality' of a wheat variety can be described in relation to the processing its kernels must undergo to make a good bread. Bread wheat kernels must be suitable for proper milling into a flour that can produce a dough capable of becoming fine bread. The type of bread varies depending on local bread-making practices. Part I of this book contains a study of the anatomy and chemical composition of wheat kernels, and of the fundamental difference between `soft' and `hard' kernelled varieties. It relates these characteristics to the processes of milling, dough-making and manufacturing of bread, and to biscuit and pasta making. The genetic basis for these characteristics is illustrated, and assay methods for characterizing wheat varieties - ranging from Saunders' chewing test to the most recent developments in glutenin and gliadin research - are evaluated. Part II briefly describes - country by country - how bread-making quality has been integrated into wheat-breeding programmes throughout Europe, and how breeders have attempted to resolve the conflict between yield and quality.
