Book International Symposium on Olfaction and Taste

Download or read book International Symposium on Olfaction and Taste written by Thomas E. Finger and published by John Wiley & Sons. This book was released on 2009-08-24 with total page 765 pages. Available in PDF, EPUB and Kindle. Book excerpt: This volume presents the latest research in the broad field of the chemical senses from the International Symposium on Olfaction and Taste. This field includes not only the obvious senses of taste and smell but also chemical irritation and related sensations. Scientists investigate the mechanisms and functions of the chemical senses in the oral and nasal cavity as well as in the viscera including the gut and airways. This volume takes an integrative approach and provides historical context for modern research in the field. NOTE: Annals volumes are available for sale as individual books or as a journal. Book Umami

    Book Details:
  • Author : Ana San Gabriel
  • Publisher : Springer Nature
  • Release : 2023-09-12
  • ISBN : 303132692X
  • Pages : 205 pages

Download or read book Umami written by Ana San Gabriel and published by Springer Nature. This book was released on 2023-09-12 with total page 205 pages. Available in PDF, EPUB and Kindle. Book excerpt: This Open Access book covers the concept of umami, the unique taste imparted by the amino acid glutamate, was first described in 1908 by Dr. Kikunae Ikeda of Tokyo University. Over the past century, hundreds of studies have explored the mechanistic underpinnings of the taste, leading to the characterization of the umami taste receptor in 2002. How this fifth basic taste figures into nutrition and health, however, remains underexplored. Umami: Taste for Health provides an overview of the relationship between umami and human health. Authors explain how glutamate not only produces a characteristic oral sensation in the mouth but also functions as a signaling molecule to induce physiological responses. With the support of recent studies, the book demonstrates how the taste properties of umami make glutamate a promising substance to lower salt intake, promote satiation and support healthier aging. The text also covers practical culinary applications to increase umami flavor and practical usage of umami for promoting healthy eating. Provides an overview of the relationship between umami and human health; Explores the potential of glutamate to lower salt intake, promote satiation and support healthier aging; Covers practical culinary applications of umami flavor and practical usage of umami for promoting healthy eating.

Book Olfaction and Taste XI

Available in PDF, EPUB and Kindle. Book excerpt: In this compendium of current studies on olfaction and taste - the most comprehensive yet to appear in this series - the chemical senses are elucidated from points of view ranging from anatomy, electrophysiology, molecular biology (especially chemoreceptor gene cloning), biochemistry, and psychophysics to the latest clinical and technological applications of chemosensory research. Specific topics include the structure and function of the tastebud and olfactory epithelium; the genetics and mechanisms of olfactory and taste transduction; the chemistry and function of flavor compounds; the psychophysics of taste and olfaction in daily human life; the brain mechanisms of coding, learning, and memory in olfaction and taste; the clinical assessment of taste and olfaction with special reference to aging and disorders; noninvasive measurements of human olfactory and taste responses for therapeutic purposes; artifical sensing devices; chemoreception in aquatic organisms and other species; and chemosensory transduction in insects. With its multidisciplinary approach, this volume will be an invaluable source of information not only for researchers, clinicians, and students but also for technologists in fields such as artificial sensing, perfumery, brewery, food chemistry, aquafarming, and agriculture.

Book Smellosophy

  • Publisher : Harvard University Press
  • Release : 2020-07-14
  • ISBN : 0674983696
  • Pages : 385 pages

Download or read book Smellosophy written by A. S. Barwich and published by Harvard University Press. This book was released on 2020-07-14 with total page 385 pages. Available in PDF, EPUB and Kindle. Book excerpt: A pioneering exploration of olfaction that upsets settled notions of how the brain translates sensory information. Decades of cognition research have shown that external stimuli “spark” neural patterns in particular regions of the brain. This has fostered a view of the brain as a space that we can map: here the brain responds to faces, there it perceives a sensation in your left hand. But it turns out that the sense of smell—only recently attracting broader attention in neuroscience—doesn’t work this way. A. S. Barwich asks a deceptively simple question: What does the nose tell the brain, and how does the brain understand it? Barwich interviews experts in neuroscience, psychology, chemistry, and perfumery in an effort to understand the biological mechanics and myriad meanings of odors. She argues that it is time to stop recycling ideas based on the paradigm of vision for the olfactory system. Scents are often fickle and boundless in comparison with visual images, and they do not line up with well-defined neural regions. Although olfaction remains a puzzle, Barwich proposes that what we know suggests the brain acts not only like a map but also as a measuring device, one that senses and processes simple and complex odors. Accounting for the sense of smell upsets theories of perception philosophers have developed. In their place, Smellosophy articulates a new model for understanding how the brain represents sensory information.

Book Experimental Cell Biology of Taste and Olfaction

Book Pheromone Communication in Moths

Download or read book Pheromone Communication in Moths written by Jeremy D. Allison and published by Univ of California Press. This book was released on 2016-10-25 with total page 411 pages. Available in PDF, EPUB and Kindle. Book excerpt: Common among moths is a mate-finding system in which females emit a pheromone that induces males to fly upwind along the pheromone plume. Since the chemical pheromone of the domesticated silk moth was identified in 1959, a steady increase in the number of moth species whose pheromone attractants have been identified now results in a rich base for review and synthesis. Pheromone Communication in Moths summarizes moth pheromone biology, covering the chemical structures used by the various lineages, signal production and perception, the genetic control of moth pheromone traits, interactions of pheromones with host-plant volatiles, pheromone dispersal and orientation, male pheromones and courtship, and the evolutionary forces that have likely shaped pheromone signals and their role in sexual selection. Also included are chapters on practical applications in the control and monitoring of pest species as well as case studies that address pheromone systems in a number of species and groups of closely allied species. Pheromone Communication in Moths is an invaluable resource for entomologists, chemical ecologists, pest-management scientists, and professionals who study pheromone communication and pest management.
