Book excerpt: The increasing demand for high-quality beef has led to the necessity of including higher levels of cereal grains and its by-products into cattle diets. In this context, adequate nutrition of beef cattle involves knowledge of energy and nutrient requirements to define specific nutritional strategy. The evolution feeding strategies to feedlot cattle depends on advances related to ruminant metabolism, as well as to the ruminal microbiota. Furthermore, a continuous flow of knowledge development in feedlot cattle nutrition and metabolism is important, as new feeds, additives, or even new management approaches come up very often, and new scenarios will impact protein and energy metabolism, the ruminal microbiota, and also strategies to modulate ruminal fermentation to improve health and performance of feedlot cattle. Overall, the main goal of this Research Topic is to contribute with recent advances in feedlot cattle nutrition and metabolism, addressing studies related to the nutrition of high-performing ruminants, with a special emphasis on the feed efficiency, ruminal fermentation and animal performance. Furthermore, we are interested in different aspects of sustainability and efficiency. In other words, the goal is to attract studies that address such issues, both from a general perspective and in relation to specific domains. Hence, the integration of existing and current knowledge will help refine strategies to optimize the performance of feedlot cattle.

Book excerpt: Fetal programming is a relatively new and quickly growing field of research in the livestock industry. The concept of fetal programming is simply defined as the effects a change in maternal nutritional intake has on offspring, whether it be a genetic or physical change. The intention of this study was to specifically look at the effects of nutrient restriction of cows during the second trimester of gestation on the growth and performance of the resulting calves. In this study, thirty-two cows of predominantly angus influence from the Utah state university herd were chosen, naturally bred to a pure bred angus sire, and then allocated into two treatments: maintenance and restricted. These groups were treated uniformly for first and third trimesters of gestation, while in the second trimester, they were managed in a way that the maintenance group maintained a greater level of body condition and weight compared with the restricted group. Calf growth and performance was measured and compared for effects of fetal programming. Previous studies in beef found positive effects on carcass characteristics. However, little work has been done to ensure that fetal programming is not detrimental to calves early in life. Though this study did find that nutrient restriction resulted in more excitable cattle, no negative effects caused by programming were found in growth and performance of the offspring.

Book excerpt: Abstract: Jersey cattle are recognized as being slower growing and having more yellow fat compared with other breeds, thus limiting the use of this breed for beef production. Because Jerseys are slower growing, they require additional time on feed to achieve acceptable market weights and yield acceptable hot carcass weights. Although Jerseys face challenges, the resulting product has other quality aspects that exceed the general beef population. Gaps in knowledge exist regarding the optimum forage level in finishing diets on growth performance, carcass characteristics, and beef palatability. The objective of this study was to evaluate the effects of forage level (12 vs. 24% sudangrass:alfalfa hay, DM-basis) in steam-flaked, corn-based finishing diets on carcass characteristics, palatability, and retail color stability of Jersey beef. Seventy-nine Jersey steers were blocked by weight and randomly assigned one of the following treatments for a 385-d trial period: Jersey low- 12% (JL; n = 38) or Jersey high- 24% (JH; n = 39) forage, DM-basis. Forty-eight hours postmortem (PM), strip loins were removed, vacuum-packaged, and aged at 3°C for 18 d PM. Following the aging period, steaks from the longissimus muscle were sliced, vacuum-packaged, and frozen ( -20°C) until analyzed. Steers fed the low forage diet had greater (P 0.05) backfat and tended to have greater dressing percent compared to steers fed the high forage diet. Live weight, HCW, LMA, and USDA Yield Grade were not affected (P 0.05) by forage level. Steers fed the low forage diet on average tended to bring a 6% greater value ($63.73 more per head) compared to steers fed the high forage diet. Control calves were normal weaned and received no supplemental feed while they grazed with their dams. The diets fed to early-weaned and creep-fed cattle were formulated to be isonitrogenous. Early-weaned calves (133±21 days of age) were placed in the feedlot, while normal-weaned calves remained with their dams on pasture (2 or 3 replications per location).
