Book excerpt: World population is growing at an alarming rate and may exceed 9.7 billion by 2050, whereas agricultural productivity has been negatively affected due to yield limiting factors such as biotic and abiotic stresses as a result of global climate change. Wheat is a staple crop for ~20% of the world population and its yield needs be augmented correspondingly in order to satisfy the demands of our increasing world population. “Green revolution”, the introduction of semi-dwarf, high yielding wheat varieties along with improved agronomic management practices, gave rise to a substantial increase in wheat production and self-sufficiency in developing countries that include Mexico, India and other south Asian countries. Since the late 1980’s, however, wheat yield is at a standoff with little fluctuation. The current trend is thus insufficient to meet the demands of an increasing world population. Therefore, while conventional breeding has had a great impact on wheat yield, with climate change becoming a reality, newer molecular breeding and management tools are needed to meet the goal of improving wheat yield for the future. With the advance in our understanding of the wheat genome and more importantly, the role of environmental interactions on productivity, the idea of genomic selection has been proposed to select for multi-genic quantitative traits early in the breeding cycle. Accordingly genomic selection may remodel wheat breeding with gain that is predicted to be 3 to 5 times that of crossbreeding. Phenomics (high-throughput phenotyping) is another fairly recent advancement using contemporary sensors for wheat germplasm screening and as a selection tool. Lastly, CRISPR/Cas9 ribonucleoprotein mediated genome editing technology has been successfully utilized for efficient and specific genome editing of hexaploid bread wheat. In summary, there has been exciting progresses in the development of non-GM wheat plants resistant to biotic and abiotic stress and/or wheat with improved nutritional quality. We believe it is important to highlight these novel research accomplishments for a broader audience, with the hope that our readers will ultimately adopt these powerful technologies for crops improvement in order to meet the demands of an expanding world population.

In Europe, where wheat is the main staple, bread wheat (Triticum aestivum) covers the majority of land on which wheat is cropped. Wheat breeders and technologists have contributed greatly to the continued success of bread wheat and its products. The `bread-making quality' of a wheat variety can be described in relation to the processing its kernels must undergo to make a good bread. Bread wheat kernels must be suitable for proper milling into a flour that can produce a dough capable of becoming fine bread. The type of bread varies depending on local bread-making practices. Part I of this book contains a study of the anatomy and chemical composition of wheat kernels, and of the fundamental difference between `soft' and `hard' kernelled varieties. It relates these characteristics to the processes of milling, dough-making and manufacturing of bread, and to biscuit and pasta making. The genetic basis for these characteristics is illustrated, and assay methods for characterizing wheat varieties - ranging from Saunders' chewing test to the most recent developments in glutenin and gliadin research - are evaluated. Part II briefly describes - country by country - how bread-making quality has been integrated into wheat-breeding programmes throughout Europe, and how breeders have attempted to resolve the conflict between yield and quality. It is human food and beverages which are the predominant uses covered in this book, since the nutritional quality of cereals for animal feed is described in other publications on animal nutrition, and industrial products are a relatively minor use of cereals. Cereals are the main components of human diets and are crucial to human survival. Three species, wheat, rice and maize, account for the bulk of human food. Barley is the major raw material for beer production and ranks fourth in world production. Other species such as sorghum are regionally important. This book covers all the major cereal species: wheat, rice, maize, barley, sorghum, millet, oats, rye and triticale. Specific chapters have been devoted to a description of the major end-uses of each of the species and to definition of the qualities required for each of their end uses. The functional and nutritional quality of cereals determines their suitability for specific purposes and may limit the quality of the end product, influencing greatly the commercial value of grain. An under standing of the factors that determine grain quality is thus important in the maintenance of efficient and sustainable agricultural and food production. The biochemical constituents of the grain that determine quality have been described in chapters on proteins, carbohydrates and other components. An understanding of the relationships between grain composition and quality is important in selecting grain for specific uses.

Book excerpt: If I had to nominate an area of food production in which science has played a major role in addressing product quality to meet market needs I would not pass by the intimate rela tionship of cereaI chemistry with cereaI plant breeding programs. In Australia, cereaI chemistry and product quality labs ha ve long been associated with wheat and barley breeding programs. Grain quality characteristics have been principal factors determining registration of new cultivars. This has not been without pain in Australia. On the one hand some cultivars with promising yield and agronomic characteristics have been rejected on the basis of quality characteristics, and for a period our breeders imposed selection regimes based on yield which resulted in declining quality characteristics. In the end the market provides the critic al signals. For many years Australia held a commanding market position on the basis of a single quality image, initiaHy based on bulked wheat of fair/average quality (FAQ). Later this was improved by segregation into four broad classes* based around Australian Standard White (ASW). This is no longer a viable marketing strategy. We were probably a little slow in rec ognising the mosaic of present day wheat markets, but now have up to 18 different grades available. Around the world wheat is a grain with many end uses. Its use in bread is expanding.
