Book excerpt: The aim of the commercial ripening of bananas is to provide fruit which has not only a good shelf-life but also excellent appearance and eating quality, and to have it available when and where required. To achieve this, ripening must be carried out under carefully controlled conditions of temperature, humidity, and ethylene and carbon dioxide levels. Ethylene is necessary to initiate repening and to make fruit of variable maturity ripen evenly. Temperature is the main factor in successful ripening as it controls the speed of ripening and the shelf-life and also the eating quality and colour of the ripened fruit, while humidity affects colour, freshness, and carrying capacity. If the carbon dioxide produced by the fruit accumulates excessively in the room, ripening is slow. The carbon dioxide level can be kept low by ventilation with outside air when necessary.
