Tomato wants to join the other fruits, but does he belong? The perfect mix of botany and a bunch of bananas! All the fruit are in the bowl. There's Apple and Orange. Strawberry and Peach. Plum and Pear. And, of course, Tomato. Now wait just a minute! Tomatoes aren't fruit! Or are they? Using sly science (and some wisdom from a wise old raisin), Tomato proves all the fruit wrong and shows that he belongs in the bowl just as much as the next blueberry! Download or read book Jane Grigson s Fruit Book written by Jane Grigson and published by U of Nebraska Press. This book was released on 2007-04-01 with total page 558 pages. Available in PDF, EPUB and Kindle. Book excerpt: Jane Grigson?s Fruit Book includes a wealth of recipes, plain and fancy, ranging from apple strudel to watermelon sherbet. Jane Grigson is at her literate and entertaining best in this fascinating compendium of recipes for forty-six different fruits. Some, like pears, will probably seem homely and familiar until you've tried them ¾ la chinoise. Others, such as the carambola, described by the author as looking ?like a small banana gone mad,? will no doubt be happy discoveries. ø You will find new ways to use all manner of fruits, alone or in combination with other foods, including meats, fish, and fowl, in all phases of cooking from appetizers to desserts. And, as always, in her brief introductions Grigson will both educate and amuse you with her pithy comments on the histories and varieties of all the included fruits. ø All ingredients are given in American as well as metric measures, and this edition includes an extensive glossary, compiled by Judith Hill, which not only translates unfamiliar terminology but also suggests American equivalents for British and Continental varieties where appropriate.

Book excerpt: The renowned chef offers more than 200 sweet and savory recipes featuring fruit: “Wonderful . . . invaluable both as a reference and a cookbook” (Library Journal). In 1971, Alice Waters opened Chez Panisse in Berkley, California, as a place to cook country French food with local ingredients and talk with friends and neighbors. As the restaurant's popularity grew, so did Alice’s commitment to fresh, organic ingredients and local farmers and producers. Now, in this companion to Chez Panisse Vegetables, Waters and the cooks at Chez Panisse celebrate the exuberant flavors of fresh, ripe fruit. Rejoice in the late-summer peach harvest with Peach and Raspberry Gratin, and extend the season with Grilled Cured Duck Breast with Pickled Peaches. Enjoy the first plums in Pork Loin Stuffed with Wild Plums and Rosemary. Preserve the fresh flavors of winter citrus with Kumquat Marmalade or Candied Grapefruit Peel. Organized alphabetically by fruit—from apples to strawberries—and including helpful essays on selecting, storing, and preparing fruit, this book will help you make the very most of fresh fruits from season to season. Illustrated with beautiful color relief prints by Patricia Curtan, Chez Panisse Fruit is a book to savor and to treasure.

Download or read book Fruits and Vegetable Wastes written by Ramesh C. Ray and published by Springer Nature. This book was released on 2022-11-16 with total page 445 pages. Available in PDF, EPUB and Kindle. Book excerpt: This book puts together all aspects of valorization of vegetable and fruit wastes (VFWs) into different biocommodities and platform chemicals using fermentation and non-fermentation processes. VFWs are a special group of solid waste (biomass) that needs to be characterized to understand the nature of applications as raw materials and to propose an appropriate methodology for bioprocessing into value-added commodities. VFWs provide favorable conditions for the growth of microorganisms, and this opens up great opportunities for their use in fermentation processes. For example, VFWs can be used as a solid support, carbon, and nutrient source in fermentation for the production of a variety of value-added biocommodities such as enzymes, single-cell proteins, bioadsorbents, phenolic bioactive compounds, aroma and flavor compounds, and platform chemicals like lactic acid, bioethanol, and biobutanol. Researchers and academics in the area of environmental science and engineering, chemical engineering, biotechnology, life science, and food science and technology, undergraduate and graduate students, industry professionals, and policymakers will find this publication useful. Bioprocessing of agro-wastes is a recent technology for developing novel bioproducts. This book will also be of interest to the general public as a reference for all those interested in waste management.
