Download or read book Muscle Foods written by Burdette C. Breidenstein and published by Springer Science & Business Media. This book was released on 2013-03-09 with total page 585 pages. Available in PDF, EPUB and Kindle. Book excerpt: Traditionally, in the food industry, there has been a distinction made among meat, poultry, seafood, and game. Meat has historically been defined as the edible flesh of animals. This basically referred only to the red meats, namely, beef, lamb, pork, and veal, including both fresh and processed products as well as variety or glandular meats. It has been recognized more recently that all foods derived from muscle, or muscle foods, have basically the same or similar characteristics in physical and chemical properties. Tberefore, it is logical to exarnine and consider all muscle foods under one cover. Tbis book, therefore, is an attempt to address the various attributes of red meat, poultry, fish, and game under the single heading of muscle foods and to note any differences where they might OCCUT. It is of interest that of the 10 top V. S. meat companies in 1990, 8 of them were dealing with poultry as well as red meats and that 4 of the 10 were also involved with seafoods. Tbis lends impetus to the inclusion of all three in a book such as this. Furthermore, the rapid increase in consumption of poultry meat to approximately 30 kg (65 pounds) per capita and seafoods to 7 kg (16 pounds) per capita compared to beef at 34 kg (75 pounds) and pork at 30 kg (65 pounds), whereas veal and lamb/mutton represent only 0.

Book Processing of Poultry

Download or read book Processing of Poultry written by G. C. Mead and published by Springer Science & Business Media. This book was released on 2012-12-06 with total page 427 pages. Available in PDF, EPUB and Kindle. Book excerpt: Over the last 40 years, poultry-meat production has undergone considerable expansion in much of the developed world. The industry has changed from an essentially farm-based operation to one where economies of scale in rearing and processing have led to a high degree of operational efficiency. As a sequel to these changes, however, there is now greater emphasis on product quality, rather than mere 'production at least cost'. Also, the more recent growth in further processed and 'value-added' convenience items has helped to maintain a buoyant market for poultry, and has shown that the industry can rapidly adapt to changing consumer needs and preferences. It is in the areas of primary processing and further-processed product development that the greatest technological changes have occurred within the industry. Processing, in particular, has become more mechanical, so that most stages in the production of oven-ready carcasses or cut-portions are now either semi-or fully-automated, thus reducing labcur costs and helping to maximise the speed and efficiency of the process. However, not all of the changes that have taken place have necessarily been in the best interests of maintaining product quality, e.g. in relation to meat tenderness and microbial contamina tion, and it is essential for any processor to understand fully the effects of processing on all aspects of meat quality, including the efficacy of possible control measures.

Book Selected Formulary Handbook

This book was released on 2007-01-01 with total page 282 pages. Available in PDF, EPUB and Kindle. Book excerpt: Formulation is a key process in the overall life cycle so that products are delivered that is of the right quality, at a competitive cost, and is made available within the specified time scale. A formula is an entity constructed using the symbols and formation rules of a given logical language. In science, a specific formula is a concise way of expressing information symbolically as in a mathematical or chemical formula. The chemical formula identifies each constituent element by its chemical symbol and indicates the number of atoms of each element found in each discrete molecule of that compound. If a molecule contains more than one atom of a particular element, this quantity is indicated using a subscript after the chemical symbol and also can be combined by more chemical elements. It is all in the formula, whose implications also remain undiscovered by modern economists. It plays a major role in every process whether it is manufacturing process or preservation. There is a big importance of formula in our life because formulas and equations deal with everyday things like shapes, investments, mixing things, movement, lighting, travel and a host of other things they provide information you can use in planning activities. Some of the fundamentals of the book are foods, foods adulterants, beverages, flavours extracts, dried casein, its manufacture and uses, phosphate of casein and its production, preparation of edible emulsions of solid in fat, gelatin desert, lemon flavor gelatin dessert, cherry flavor, chocolate peanut bars, coffee caramels, butterscotch squares, Everton toffee, licorice drops, fruit jelly, candies, fruit caramels, sausage, American pork sausage, German mince meat, gravy aid kitchen bouquet type Sauer, kraut essential oils, imitation lemon flavor, non alcoholic lemon flavor, non alcoholic imitation lemon flavor, household root beer flavor, temperature readings for syrups, Swedish bitters, pharmaceuticals and proprietary, antiseptic inhalant, antiseptic for telephone mouthpiece, mentholated throat and mouth wash, zinc chloride mouth wash, sterilizing solution for oral mucous membrane, ephedrine nasal spray, antiseptic oil spray for nose and throat, aseptic and analgesic dusting powder for wounds hay fever ointment, etc. This book present several hundred advanced product formulations for household, industrial and other applications. This book will be invaluable resource to development chemists looking for leads in the formulation of a wide range of products. It has low fat content and is highly nutritious, and has potential to be used to combat hyperacidity, hypertension, pneumonia and respiratory disease. This book reviews up-to-date literature on camel meat and meat products, carcass and meat quality characteristics, muscle structure, post-mortem analysis and the nutritive value to humans. A comparatively small component of global meat consumption, camel meat has the potential to undergo an explosion of production worldwide, and currently farming for camel meat in Asia, Africa, Latin America and Australia is undergoing significant expansion. The potential of camel meat in helping to meet projected world food shortages, and being sustainably farmed, is also explored by the editors.

This book was released on 2012-12-02 with total page 688 pages. Available in PDF, EPUB and Kindle. Book excerpt: Microbial Ecology of Foods, Volume II: Food Commodities is a comprehensive treatise on the microbiology of specific commodity groups. The commodity groups discussed include meat, milk, egg, fish, shellfish, and their products. Other groups included are feeds of animal origin and pet foods; agricultural crops and their products; fats and oils; beverages; confectioneries; miscellaneous foods; and natural mineral waters. Composed of 15 chapters, this book has chapters that cover the important properties of the food commodity that affects the microbial content. The initial microbial flora on flesh foods at slaughter or on vegetable foods at harvest and the effects of harvest, transport, processing, and storage on the microbial content are discussed as well. Furthermore, this text explains the means of controlling the process and the microbial content. Each chapter is a review of applied microbiology, compiled by leading authorities selected solely for their expert knowledge. The final chapter emphasizes factors that contribute to outbreaks of foodborne disease. This volume will greatly appeal to those interested primarily in applied aspects of food microbiology, such as food processors, microbiologists, and technologists; veterinarians; public health workers; and regulatory officials.
