Book excerpt: Excerpt from Food and the Principles of Dietetics He would like, however, to take this opportunity of expressing his special indebtedness to the work and writings of Professor Atwater and his colleagues in America, who have done so much in recent years to advance our knowledge on the principles of dietetics. The opening chapters, especially, of the present book owe much to the teaching of the American school. To Dr. Leonard Hill and the writer's other colleagues at the London Hospital Medical College be must express his gratitude for much encouragement and useful advice, and to his friends Dr. J. J. R. Macleod and Mr. Robert Tanner he is indebted for the pains which they have bestowed on the revision of the proof-sheets. The illustrations have been drawn by Mr. Danielsson with his usual skill, and the care with which Mr. Archibald Clarke has compiled the index has saved the author much labour. Book Principles of Human Nutrition

Download or read book Principles of Human Nutrition written by Whitman H. Jordan and published by Forgotten Books. This book was released on 2015-07-28 with total page 488 pages. Available in PDF, EPUB and Kindle. Book excerpt: Excerpt from Principles of Human Nutrition: A Study in Practical Dietetics AN examination of this volume will at once make it evident that it was not prepared for use with students who have specialized in organic and biological chemistry. The object in view was rather such a presentation of the subject matter related to human nutrition as would be more or less adapted to popular use, but particularly to instruction of students with moderate scientific acquirements, whether in colleges, secondary schools, short courses, schools of domestic science, or correspondence schools. The reliable knowledge bearing on the nutrition of man is mainly to be found in elaborate works on physiology and physiological chemistry, the contents of which are not generally available. More over, the highly technical facts are usually not centered around a philosophy of living. The aim here has been to show the adjustment of this knowledge to a rational system of nutrition without insisting upon adherence to technical details that are not feasible in the ordinary administration of the family dietary. It is needless to state that the author makes no claim to having written on his own authority, but, on the other hand, he has relied upon the conclusions of those authorities and investigators whose sound scholarship in this field of knowledge is unquestioned. The following literature is that which has mainly been considered: Metabolism and Practical Medicine, Von Noorden; trans lated by J Walker Hall. d104book of Physiological Chemistry, Abderhalden; translated by William T. Hall. About the Publisher Forgotten Books publishes hundreds of thousands of rare and classic books. Find more at www.forgottenbooks.com This book is a reproduction of an important historical work. Book Food and Dietetics Classic Reprint

Download or read book Food and Dietetics Classic Reprint written by Alice Norton and published by . This book was released on 2015-07-21 with total page 284 pages. Available in PDF, EPUB and Kindle. Book excerpt: Excerpt from Food and Dietetics The problems of the household are more difficult to-day than they have ever been, for each advance in science, each modern invention, has brought in its train new responsibilities and new duties. In every department of the administration of the home more knowledge and skill are required than ever before. With the increase of conveniences has come increased care. Standards of living have changed as well, and greater perfection in all household service is demanded of the home-maker. We still carry on in the household many of the numerous trades that were formerly a part of the home life, as cooking, cleaning, laundry work, sewing. At the same time more close supervision of the life of the children, mental, moral and physical, is required; more knowledge is needed to control materials if we would have that power over our environment which makes us the masters and not the slaves of our belongings; and the social demands upon time and strength can not be ignored. If to-day we would lead "the simple life," it must be as a result of determined effort, often in the face of more or less conscious opposition on the part of relatives and friends and of society in general. Book Diet in Health and Disease Classic Reprint

Download or read book Diet in Health and Disease Classic Reprint written by Julius Friedenwald and published by Forgotten Books. This book was released on 2017-10-21 with total page 922 pages. Available in PDF, EPUB and Kindle. Book excerpt: Excerpt from Diet in Health and Disease The continued appreciation of the profession as evidenced by their using this book has added greatly to the endeavor to make the fifth edition of more value than the preceding ones. There are scarcely any subjects in medicine that have received the same amount of attention of recent years as dietetics and the study of nutrition. The literature is voluminous and it would neither be possible nor profitable to try to include everything that has been brought forward. There are many differences of opinion among authorities on many questions which can only be settled by future study and in many cases the views expressed are diametrically op posed. Much of our knowledge on nutrition is fragmentary and the exact value of many contributions cannot be estimated until further investigations have been made. Dietetics has always been a sub jcet much influenced by fads and fancies and much of the literature has little value in consequence. The authors have endeavored to give fully the various facts relat ing to the composition of foods, to indicate as far as possible in the space of one volume the scientific basis, when there is any for the various diets and. To give at the same time practical directions and diet lists which can be used without extensive training. Book excerpt: Excerpt from The New Dietetics, What to Eat and How: A Guide to Scientific Feeding in Health and Disease The constant aim of the author has been to present the known facts relating to human nutrition in such a way as to be of greatest service to the physician, the trained nurse, the intelligent housewife, and to every student of nutrition, as well as to the professional dietitian. To this end numerous tables have been prepared by the use of which the dietary may be balanced not only for protein, fats and carbohydrates, but also for cellulose, lime and iron, and even acids and bases. These tables are based upon the data supplied by the tables of Atwater, Bunge, Gautier. Koenig, and Sherman. They have been in constant use at the Battle Creek Sanitarium and elsewhere for several years. About the Publisher Forgotten Books publishes hundreds of thousands of rare and classic books. Available in PDF, EPUB and Kindle. Book excerpt: Excerpt from Foods and Dietaries: A Manual of Clinical Dietetics A knowledge of the physiology of digestion lies at the root of sound practical dietetics, and although it does not come within the scope of the present work to enter into a lengthy examination of different foods and their properties, or into a detailed account of the mechanism of digestion, it may be well to advert very briefly to a few points regarding foods and normal digestion. For the present purpose foods may be grouped as (1) nitrogenous elements (albuminoids, proteids); (2) carbo hydrates (starches, sugars, (3) hydro-carbons (fats); (4) salts and water. Download or read book Chemistry of Food and Nutrition Classic Reprint written by Henry C. Sherman and published by Forgotten Books. This book was released on 2017-10-16 with total page 482 pages. Available in PDF, EPUB and Kindle. Book excerpt: Excerpt from Chemistry of Food and Nutrition The purpose of this book is to present the principles of the chemistry of food and nutrition with special reference to the food requirements of man and the considerations which 'should underlie our judgment of the nutritive values of foods. Food is here considered chiefly in its relations to nutrition, the more detailed description of individual articles of food and the chemi cal and legal control of the food industry having been treated in another volume. The present work is the outgrowth of several years' experience in teaching the subject and is published primarily to meet the needs of college classes. It is hoped that the book may also be of service to other readers who appreciate the importance of food and nutrition as factors in health and are interested in the scientific foundations which have been so greatly broadened and strengthened by the investigations of the past few years. Book Dietetics Classic Reprint

Download or read book Dietetics Classic Reprint written by Alexander Bryce and published by Forgotten Books. This book was released on 2016-09-26 with total page 102 pages. Available in PDF, EPUB and Kindle. Book excerpt: Excerpt from Dietetics IT is open to serious doubt whether the progress made in the study of dietetics has been of such a sweeping character as to warrant its inclusion in the category of the sciences. There are, however, many indications that it has advanced beyond the stage of a simple accumu lation of facts and experiences, and is preparing to take its place as a subject amenable to law. This short treatise does not pretend to be more than a fairly careful resume of the principles underlying the important question of nutrition, although I have endea voured to impart a personal character to the book by taking every opportunity of expressing my own views on all the important points. I am hopeful that it may serve as a guide of more than ephemeral interest and value, not only to those who desire no further acquaint ance with the subject, but to those who wish to pursue the fascinating study among the larger text-books.
