Book excerpt: Earlier research showed that conjugated linoleic acid (CLA) content in milk fat is highest when cows' diets are supplemented with a blend of fish oil (FO) and linoleic acid-rich oils. The objectives of this study were to compare the effect of FO and sunflower oil (SFO) supplementation on milk cis -9, trans -11 CLA content and its temporal change when dairy cows managed on pasture or in confinement. Fourteen Holstein cows were assigned into two treatment groups: cows grazed on alfalfa-grass pasture (PAS) or were fed a corn silage-alfalfa hay mix ad libitum (LOT). Both groups were supplemented with 8.2 kg/d grain supplement containing 640 g of FO and SFO (1:3 w/w). Milk samples were collected every third day and during the last 3 days of the experimental period. Milk yield was higher (P 0.05) with the LOT diet compared with the PAS diet. Milk fat percentages and yields were similar (P 0.05) for the two diets. Treatment diets had no effect (P > 0.05) on milk trans C18:1 concentrations (10.64 and 9.82 g/100g of total fatty acids (FA) for the LOT and PAS, respectively) or yields (60.65 and 64.01 g/d), but did affect isomer distributions. It is also generally recognized that dietary fat, namely the type and amount, playa significant role in modulating the health stat~s of large population groups in econ omically advanced countries, and that, more specifically, the onset and progression of a number of diseases of wide incidence and large socio-economical relevance, such as hyperlipidaemias, diabetes, hyper tension, are significantly affected by dietary fats. Associations operating in public health preventive programs and clinical associations in affluent countries have recommended changes of dietary habits and especially of fat consumption in the whole community. Among the parameters to be modified of special relevance are the re duction of total fat, of saturated fatty acids and cholesterol intake and to increase the amount of unsaturated fatty acids. It is, however, becoming more and more evident that each member of the complex fatty acid moiety of our diet may playa different role from a nutritional point of view. This is particularly true for the highly unsaturated compounds belonging to the two metabolic series n-6 and n-3, contained in high concentrations in vegetable oils and in lipids from marine animals respectively, as well as for oleic acid, contained in high concentrations in olive oil.

We hypothesized that fatty acids from a given meal would be transferred acutely from chylomicrons into breast milk. To test this hypothesis, the following experiment was performed. Fourteen lactating women drank 700 Calorie breakfast formulas containing six different test fats: 40 grams of cocoa butter, coconut, safflower or canola oil, 20 grams of menhaden oil or 7 grams of herring oil. Each fat contained a specific fatty acid whose appearance was tracked in the milk. After consuming the breakfast formula, subjects collected mid-feeding milk samples at 0, 6, 10, 14 and 24 hours, and one morning sample on days two through seven. Fatty acids specifically tracked in milk samples were: C12:0 (coconut oil), C18:0 (cocoa butter), C18:2n-6 (safflower oil), C18:3n-3 (canola oil), C22:ln-ll (herring oil), and C20:5n-3 and C22:6n-3 (menhaden oil).
