Strong men, we know, lived before Agamemnon; and strong wine was made in the fair province of Champagne long before the days of the sagacious Dom Perignon, to whom we are indebted for the sparkling vintage known under the now familiar name. The chalky slopes that border the Marne were early recognised as offering special advantages for the culture of the vine. The priests and monks, whose vows of sobriety certainly did not lessen their appreciation of the good things of this life, 10 and the produce of whose vineyards usually enjoyed a higher reputation than that of their lay neighbours, were clever enough to seize upon the most eligible sites, and quick to spread abroad the fame of their wines. St. Remi, baptiser of Clovis, the first Christian king in France, at the end of the fifth century left by will, to various churches, the vineyards which he owned at Reims and Laon, together with the "vilains" employed in their cultivation. Some three and a half centuries later we find worthy Bishop Pardulus of Laon imitating Paul's advice to Timothy, and urging Archbishop Hincmar to drink of the wines of Epernay and Reims for his stomach's sake.

"To be a Frenchman means to fight for your country and its wine." –Claude Terrail, owner, Restaurant La Tour d’Argent In 1940, France fell to the Nazis and almost immediately the German army began a campaign of pillaging one of the assets the French hold most dear: their wine. This is the thrilling and harrowing story of the French wine producers who undertook ingenious, daring measures to save their cherished crops and bottles as the Germans closed in on them. Book excerpt: A deep dive into the world of Champagne and sparkling wine, with tips, information, and irreverent inspiration that will empower you to pop some bubbly anytime, anywhere. "Champagne and I have something in common: What if anything is possible?" In the hands of Air's Champagne Parlor owner Ariel Arce, sparkling wine is magic: It makes music sound better, clothes feel sexier, people look hotter, big ideas seem possible. It's a legal drug that lets you get a little loose, fly high on effervescence. It's a mischievous potion that was created out of an accident in the 1600s, whose mysteries we are still drawn to today. Drawing on Arce's decade of experience selling, tasting, and proselytizing, Pop Bottles educates, amuses, inspires, and empowers us to make Champagne and sparkling a go-to. Divided into two sections (one for Champagne, the other on sparkling wines from around the world), Pop Bottles dispenses with dry backstory and tedious tasting notes in favor of a rollicking, visual tour of the universe of bubbly. Discover your palate through a choose-your-own-adventure tasting guide; learn what to wear (and not wear) to a vineyard; and learn how to throw a Champagne pizza party. The sparkling section will cover dominant sparkling regions (Italy, Spain, and elsewhere in France), along with exciting newer players like England, America, Australia, and Japan.
