The business of evaporating fruits and vegetables, so as to render them capable of shipment to any market in the world, with an indefinite time of transit, and still preserve them with all their desirable qualities, has now assumed a very important place among the prominent and legitimate industries of our growing country. The Alden Process has passed the experimental stage, and is now so well known and thoroughly established, that its value to producer and consumer is generally recognized. During the past four years, more than 200 Alden factories have been established in the United States, all of which are in full operation in the proper season, producing articles not only cheaper, but also more nearly resembling fresh fruit than any other, and it is the only method of preservation that has risen to sufficient dignity and importance to command for its products a distinctive recognition and remunerative prices in the markets of the world. It is, therefore, only necessary for us to keep the public informed of our improvements in simplifying and cheapening, without entering into any lengthy arguments respecting its value and great superiority over all other methods. We are prepared to show how all the valuable qualities of a ton of apples can be placed in an imperishable condition and delivered in Liverpool at a gross cost of not more than twenty dollars, and we claim that our processed apples are better than the fresh apples shipped from the Atlantic States to Liverpool, in such large quantities, selling there at$52 per ton, leaving a difference of over 830 per ton in favor of the Alden apple. We have purposely chosen the least profitable article evaporated, sending it to a distant market in the face of unusual competition, to show to what vast proportions we may expect the trade to grow. On the fresh basis the tonnage of fruit dried is four or five times as great as that canned. The principal drying fruits of the world are grown in this state. The concentration of fruits by drying reduces the cost of transportation to the distant markets that are the principal outlets for California fruits. In no state of the Union except California, where the climate is especially favorable, is the sun-drying3 of fruits practiced on an exten sive scale. California produces well over 90 per cent of the dried-fruit output of the United States, only prunes and apples being dried in amounts of commercial significance in other states, where the use of artificial heat is essential for satisfactory drying. Apples are never sun dried commercially, even in California. Of the total tonnage of dried fruits produced in the world, dates are the largest item, amounting to from to Of this amount, however, only about 10 per cent enters international commerce, and the United States produces only a negligible tonnage. The United States production of dried figs is also relatively small. In the produc tion of other dried fruits the output of California bulks large. Accord ing to the California Cooperative Crop Reporting Service, the annual output of dried fruits in California for 1930, 1931, and 1932 averaged over tons of prunes, and over of raisins. The production of dried apricots and of peaches averages about tons each; figs, tons; and pears, less than tons. Cut off the bruised end of the roots, making a slanting cut on the under side. Cut back the top to correspond with the roots. Trees should be planted 2 to 3' inches deeper than they stood in the nursery. When planting out young trees, set them in a _new place, where it is possible to do so. When they must be planted in an orchard where an old tree has died out, dig a large hole, fill it with fresh dirt and give the young tree a chance. Supply what is lacking in the soil with a good mulch of barnyard manure and wood ashes. It is best to cultivate young trees for several years after planting. Where this cannot be done, they should be well mulched so that no grass can grow within 8 to 10 feet of the tree. Where the ground is very rich and trees do not begin to bear as soon as they ought, it is a good plan to seed down to clover for two or three years. This will check the growth and have a tendency to produce fruit buds. Do not, however, let the orchard stay seeded down unless the grass around the tres as far out as the limbs extend is kept down by mulch. As a winter protection all trees should have a mulch of straw or manure in the fall. This prevents evaporation and root killing. When trimming to produce wood, winter is the best time.
