In day-to-day survival and marketing situations, we can or not most foods are fit to eat from their optical tell whether properties. Although vision and colour perception are the means by which we appreciate our surroundings, visual acceptance depends on more than just colour. It depends on total appearance. In the recent past the food technologist has been under pressure to increase his/her understanding of first, the behaviour of raw materials under processing, and second, the behaviour and motivation of his/her customers in a growing, more discriminating, and worldwide market. The chapters which follow describe the philosophy of total ap pearance, the factors comprising it, and its application to the food industry. Included are: considerations of the evolutionary, historical, and cultural aspects of food appearance; the physics and food chemistry of colour and appearance; the principles of sensory ap pearance assessment and appearance profile analysis, as well as instrumental measurement; the interaction of product appearance, control, and acceptance in the varied environments of the laboratory, production line, supermarket, home and restaurant. A broad examination has been made in an attempt to get into perspective the importance of appearance to all sectors of the industry.

Book excerpt: Housing developments emerge amid the paddy fields on the fringes of Calcutta; overflowing trains carry peasant women to informal urban labor markets in a daily commute against hunger; land is settled and claimed in a complex choreography of squatting and evictions: such, Ananya Roy contends, are the distinctive spaces of a communism for the new millennium -- where, at a moment of liberalization, the hegemony of poverty is quietly reproduced. An ethnography of urban development in Calcutta, Roy's book explores the dynamics of class and gender in the persistence of poverty. City Requiem, Calcutta emphasizes how gender itself is spatialized, and how gender relations are negotiated within the geopolitics of modernity and through the everyday practices of territory. Thus Roy shows how urban developmentalism, in its populist guise, reproduces the relations of masculinist patronage, and, in its entrepreneurial guise, seeks to reclaim a bourgeois Calcutta, gentlemanly in its nostalgias. In doing so, her work expands the field of poverty studies by showing how a politics of poverty is also a poverty of knowledge, a construction and management of social and spatial categories.

This new volume is the product of several years of research by members of Princeton University's Moses Mesoamerican Archive and Research Project and Mexico's Proyecto Teotihuacán. Offering a variety of disciplinary perspectives - including the history of religions, anthropology, archaeology, and art history - and a wealth of new data, Mesoamerica's Classic Heritage examines Teotihuacan's rippling influence across Mesoamerican time and space, including important patterns of continuity and change, and its relationships, both historical and symbolic, with Tenochtitlan, Cholula, and various Maya communities. The contributors to Mesoamerica's Classic Heritage offer a wide range of individual interpretations, but they agree that Teotihuacan, more than any other pre-Hispanic center, was a paradigmatic source that formed the art and architecture, cosmology and ritual life, and conceptions of urbanism and political authority for significant parts of the Mesoamerican world. This great city achieved the prestige of being the site of the creation of the cosmos and of effective social and political space in Mesoamerica through its capacity to symbolize, perform, and export its imperial authority. These essays reveal the different ways in which Teotihuacan's classic heritage both fed and fed on the dynamic interactivity of the entire area.
