A concern about these approaches is that food attributes provided to respondents are assumed independent of attributes not provided. We use surveys containing a series of CEs to investigate effects of adding beef steak attributes. WTP for important attributes in the CEs decrease when the number of attributes increases from three to four, while WTP increases when the number of attributes increases from four to five. Changes in WTP for attributes depend on their relationships with newly added attributes and the number of attributes presented.

Consumers, today, are concerned about many food credence attributes, including animal rights, contamination risk, fair trade practice, genetic modification, geographical origin, and organic farming. For the past several decades, many scholars have analyzed the value consumers place on credence attributes and have reported that consumers will pay a premium for foods with these desirable properties. In addition, their studies reveal that individual consumers place greater importance on some credence attributes than others. For example, some are seriously concerned about animal welfare, while others are solely concerned about food safety. One of the objectives of this book is to summarize recent empirical findings from scholarly works on how consumers value food credence attributes. Such knowledge would benefit producers, processors, retailers, and policy makers. Another objective of this book is to discuss the effectiveness of the programs that have been introduced to strengthen the relationship between producers and consumers. Many programs have been developed to more effectively inform consumers regarding food production processes.

Labels provide information about production techniques, nutrition and ingredient information, and quality of a product (i.e. federal grade standards for eggs, U.S.D.A. quality grades on beef and pork). These are some of the key product attributes that consumers seek while making purchasing decisions. However, labels can be confusing and misleading and at times consumers simply ignore them. Research on the placement and effectiveness of labels conducted over the past few decades have found that information on the label influences buying habits. Food manufacturers could strategically use or place such attributes of labels to signal quality, shroud information or to influence the overall demand for the products. Recent legislation on mandatory labeling of foods containing genetically modified (GM) ingredients provides information about GM ingredients through the Internet or toll-free telephone numbers. However, accessing information through such mediums could increase search costs for consumers and allows firms to hide information about GM products. This goes against the original stated motivation for mandatory GM labeling--to provide transparency in food labels. In this research an experimental auction was conducted to determine consumers' willingness to pay (WTP) for GM foods by placing GM information either on the front or the back label of food products to determine whether the position of the information affected consumer choices. Participants stated their WTP for twelve food items in a total of six rounds; within each round they examined and bid on two similar products, one containing GM ingredients and the other free of GM ingredients. No significant differences in WTP were found between front and back labeled products. Also, we analyzed participants' characteristics to measure the effect on WTP, and we found several of the participant characteristics to have significant impacts on WTP.

Consumer focus on food safety has been sharpened by reports about new risks, such as that posed by "mad cow" disease, and about more familiar sources of risk, such as food borne pathogens, pesticides, and hormones. At the same time, some consumers are in creasingly interested in knowing more about how their food is produced and in selecting products based on production practices. Some of the questions consumers are asking in clude whether food is produced with the use of modern biotechnology, whether it is or ganically produced, how animals are treated in meat and egg production systems, and whether food is produced using traditional methods. Recent trends also show increased consumer demand for a variety of food products that are fresh, tasty, and available on a year-round basis. This has fostered increased global trade in food. For example, consumers in temperate climates such as North America are able to buy raspberries throughout the year, and Europeans can enjoy South American coffee. Trade in processed food products is actually increasing more rapidly than trade in agricultural commodities, further addressing the demand for variety among consumers.

Book excerpt: Over the last decade, the market for organic food products in Germany has grown steadily, as consumers become increasingly aware of credence characteristics of food products. The primary goal of this study is to integrate psychometric data into a choice experiment to examine preference heterogeneity among consumers and their willingness-to-pay for organic products. In particular, the role of trust and gender are considered in analysing both preferences and willingness-to-pay for organic products. The results of the mixed logit models reveal significant heterogeneity in preferences among consumers for the products examined. The second focus of this study is the effect of starting point bias on the willingness-to-pay estimates obtained. The use of different prices in the first choice set results in different distributions of choices and significantly different preferences and willingness-to-pay estimates in two otherwise identical choice set designs. The results of the latent class models indicate that consumers’ trust perceptions tend to significantly influence their preferences for organic food products. The findings of this study indicate that some consumer groups are willing to pay high price premiums for specific organic food products and, to some extent, for locally produced food. As there is consumer segmentation based on varying levels of trust and due to the heterogeneous preferences of the consumers, organic food marketing should increase its use of suitable communication strategies concerning quality attributes.

The Rosebud Indian Reservation in South Dakota is a minority community that has been particularly affected by the obesity epidemic, exhibiting higher rates of obesity and lower life expectancy than the rest of the country. In this study we conducted a hypothetical choice experiment to test the effectiveness of three healthy food labels in increasing the likelihood of consumers choosing to purchase healthy products. We also calculated the consumer willingness to pay for each of these labels and examined differences in label effectiveness between different demographic characteristics. We found that a culturally relevant label was effective across all demographic groups, but only when accompanied by information that it was produced with input from the local population. We also found that overweight and non-overweight consumers respond differently to different labels. Finally, we found that consumers are willing to pay a premium for products containing the most effective healthy food labels.
