Book excerpt: Abstract: The purpose of this project was to develop a garden-enhanced nutrition curriculum for educators of students in the fourth and fifth grades. The goals of this curriculum were to provide literature related to farm-to-school initiatives, to increase educators' and students' knowledge about farm-to-school programs through an evidence-based nutrition education curriculum, and to increase fruit and vegetable consumption among the students. The curriculum, Let's Grow!, was created addressing perceived barriers that prevent the implementation of school gardens that may further encourage fruit and vegetable intake in children. Though intended to specifically reach students in Los Angeles, the curriculum may be used outside this urban setting. The curriculum consists of nutrition lessons and gardening activities relating to topics identified from literature reviews. An expert-review panel reviewed the curriculum, having critiqued the literature, and provided feedback. Evaluation forms for the curriculum were created to assess the overall value of the program.

Book excerpt: In the United States (U.S.), nutrition education curriculums are written and implemented based on local school wellness policies (LWP), and thus, this field of education does not have the same level of standardization or requirements that other core subjects have, such as math or language arts. Given that nutrition education at the school level has the potential to encourage healthy food and beverage choices at an early age, standardized nutrition education in children should be considered as a vital prevention and treatment method for obesity. A review of the literature was conducted to determine the current state of nutrition education in the U.S. The literature demonstrated that while nutrition education is highly regarded and recommended by multiple associations as an essential component of school nutrition programs, its standardization remains local. Despite the lack of standardization, the literature also dictates what strategies and traits of nutrition education programs should have to be effective for teaching nutrition knowledge and eating behaviors. Some of these strategies include addressing teacher nutrition knowledge and comprehension, involvement of students' home life in the activities, and considerations for integration of nutrition standards into other core subjects. The purpose of this project was to develop a usable and adaptable nutrition education curriculum and corresponding lesson plans that can be used universally by teachers for fifth grade students. A nutrition education curriculum comprising seventeen thoroughly written lesson plans was produced using Los Angeles Unified School District's fifth grade health education standards designated by the district's LWP.

To assist in this effort, the USDA's Cooperative State Research, Education, and Extension Service (CSREES) funded a coalition, which developed a new program called "From Farm to School: Improving Small Farm Viability and School Meals." The project initiated the collaborative framework that helped establish the National Farm to School Network with organizations in more than 38 states to support the expansion of regionally and locally appropriate farm to school models. Farm to school programs connect schools with local farms to improve the nutrition of school meals, provide agriculture and health education, and support local farmers. The project has been a catalyst to start farm to school programs to address the diet-related child health issues while supporting small and medium-scale farmers. The program allows schools to buy and feature farm fresh foods, such as fruits and vegetables, eggs, honey, meat, and beans on their school lunch menus. A nutrition-based curriculum was incorporated into the schools, educating students through farm visits, gardening and recycling programs. In addition to providing a new market to increase farmers' revenue, the program connected farmers to their community through participation in programs designed to educate kids about local food and sustainable agriculture. During the project period, the number of farm to school programs expanded from six pilot districts to more than 400 programs across the nation in 2004. Currently, more than 1,000 programs are operational in 38 states. Policy changes in the 2004 Child Nutrition and Women, Infants and Children Reauthorization Act have incorporated the provisions supportive of these programs. More than 16 states have passed legislation to support farm to school programs with pending bills.
