Book excerpt: The problem was that the Elmhurst Fire Department had not considered the attitudes of its members when developing community risk reduction activities. The purpose of this research study was to develop a foundation for the Elmhurst Fire Department's community risk reduction activities. By determining the attitudes of Elmhurst Fire Department members towards community risk reduction activities, and the benefits of positive attitudes in community risk reduction, the Elmhurst Fire Department will be able to develop and implement successful community risk reduction activities. This was a descriptive and evaluative research project. The research questions were: 1. What are the benefits of positive attitudes in community risk reduction activities? 2. What are the attitudes of Elmhurst Fire Department members towards current community risk reduction activities? 3. What can the Elmhurst Fire Department do to get more firefighters involved in community risk reduction activities? The procedures included two personal interviews with experts in the field of attitudes in the workplace for their views on how positive attitudes effect outcome: Dr. Thomas Sawyer of Elmhurst College for the academic view on attitudes in the workplace, and Greg Puchalski the Vice President of Human Resources for the United States Gypsum Corporation for his views on the application of positive attitudes in the workplace. The procedure also included developing a feedback form for measuring the attitudes of the members of the EFD, the distribution of the feedback form to all department members, and the calculation and analysis of the feedback form results. The results were: Both personal interviews emphasized the importance and benefits of identifying and clarifying the attitudes of the organization. Knowing the attitudes of the organization when developing a community risk reduction activity will improve its chances of being implemented successfully and should improve organizational performance. The study developed a feedback form used for auditing the attitudes of the EFD. The feedback form identified that most members of the EFD agree the current community risk reduction activities are important and result in positive outcomes, that the school fire safety programs and the fire inspection programs should be mandatory for the Elmhurst Fire Department, and that money/benefits, helping the community, a sense of duty, and the prevention of loss of life or injury most greatly impact the decisions of EFD members to participate in community risk reduction activities. The recommendations, based on this study, were the EFD should share the results of the feedback form with all department members. The EFD should develop a committee made up of all facets of the department to analyze current community risk reduction activities. The committee based on the input from all department members should make recommendations on improving existing programs and the development of new community risk reduction activities. Also, when soliciting participation in new or existing activities the EFD should emphasize the incentives identified by the EFD members. [STAR#: 132627].

Which values should be included in a value audit for the Elmhurst Fire Department? 3. Of the included values, which do the members of the Elmhurst Fire Department feel are important? The procedures included two personal interviews with experts in the field of strategic planning for their views on value based strategic planning: Dr. Carroll of Elmhurst College for the academic view on value based strategic planning, and Howard Cross, the Director of Strategic Planning for Global Z International for his views on the application of a value based strategic plan. The procedures also included developing a feedback form for measuring the values of the members of the EFD, the distribution of the feedback form to all department members, and the calculation and analysis of the feedback form results. The results were: both personal interviews emphasized the importance and benefits of identifying and clarifying the values of the organization. Using the values of the organization to develop a strategic plan will improve its chances of being implemented successfully and should improve organizational performance. The study developed a feedback form to be used for auditing the values of the EFD, which identified the four values the members of the EFD feel are most important: family and friends; trust; integrity; and responsibility. The recommendations, based on this study, were that the EFD should share the results of the feedback form with all department members, then analyze whether the department demonstrates these values on a continual basis. The EFD should create a planning committee made up of all facets of the department, and develop a formal means of collecting input from all department members. The committee should, with the input of the entire organization, develop value statements, which will become the foundation for the EFD value based strategic plan. [STAR#: 50309].

The research questions were: 1) What are the benefits of an effective incident management system for large-scale incidents? 2) What was the importance of assessing the level of knowledge of Elmhurst Fire Department command staff members in large-scale incidents? 3) What level of knowledge did Elmhurst Fire Department command staff members have in large-scale incident management? The procedures included two personal interviews with experts in the field of incident and product management for their views on the importance and benefits of incident management. Dr. Bruce Fischer of Elmhurst College for the academic view on incident and product management, and Jerry Tonne the Deputy Fire Chief of the Lombard Fire Department and vice-president of MABAS (Mutual Aid Box Alarm System) for his views on the application of incident management. The procedures also included developing an assessment tool for measuring the knowledge level of the Elmhurst Fire Department command staff in incident management, the distribution of the assessment tool to the command staff, and the calculation and analysis of the assessment tool results. The results were: Both personal interviews emphasized the benefits and importance of an incident management system at a large-scale incident. Knowing the knowledge level of the Elmhurst Fire Department members in large-scale incident management will assist in ensuring effective preparedness training for department members, and should improve organizational performance in managing large-scale incidents. The study developed an assessment tool to measure the knowledge of department command staff in the structure and responsibilities of an incident management system. The assessment tool identified the ELmhurst Fire Departmet command staff's knowledge in the structure and responsibilities of a large-scale incident management system varied greatly. The recommendations, based on the study, were the EFD should share the results of the assessment tool with all command staff members. The EFD should also share the results with the department training committee. The training committee based on the results of the assessment tool should make recommendations on improving existing training programs as well as develop new training programs on managing large-scale incidents. This trend presents a challenge to every employee in the food processing and food prepara tion industry. Sanitation is an applied science for the attainment of hygienic conditions. Traditionally, inexperienced employees with few skills who have received little or no training have been delegated sanitation duties. Yet sanitation employees require intensive training. Technical information has been confined primarily to a limited number of training manuals provided by regulatory agen cies, industry and association manuals, and recommendations from equipment and cleaning compound firms. Most of this material lacks specific information related to the selection of appropriate cleaning methods, equipment, compounds, and sanitizers for maintaining hygienic conditions in food processing and prepara tion facilities. The purpose of this text is to provide sanitation information needed to ensure hygienic practices. Sanitation is a broad subject; thus, principles related to con tamination, cleaning compounds, sanitizers, and cleaning equipment, and specific directions for applying these principles to attain hygienic conditions in food processing and food preparation are discussed. The discussion starts with the importance of sanitation and also includes regulatory requirements and voluntary sanitation programs including additional and updated information on Hazard Analysis Critical Control Points (HACCP).
